Ayam kalio - Chicken with spicy coconut Gravy


 Chicken Kalio " spicy chicken "  slow cooking process with coconut Gravy and many spices. this cuisine is originally from west sumatra ( padang, indonesia ). it's rich flavor and unique curry chicken flavor. it's one of my favorite dish among other indonesian foods. the unique aromatic from the kaffir lime leaves & lemon grass what make you want to eat more and more this chicken kalio. 




Ingredients:
* 1 whole medium chicken ( cut in 4 sizes ), 2 small yellow onion, 4 gloves garlic, 2 cm ginger root, 1 cm galanga, 1 tsp turmeric powder, 3 candle nuts, 3 star anise, 2 long red chilies, 5 small chilies, 4 kaffir lime leaves, 3 bay leaves, 1 lemon grass, salt/pepper, 1 can a good coconut milk 

Process:
1-  wash chicken well and set a side
2- in blender, put onion, garlic, ginger, galanga, turmeric, candle nut, chilies in blender until turned paste.
3- in cooking pan, put some oil and pour the onion paste. let sauce cook until aromatic. add star anise, kaffir leaves, bay leaves, lemon grass, salt/peper. cook and stir for 2 minutes. 
4- add the chicken and stir about 5 minutes until the chicken absorb the flavor from the sauce  
5- last, add the coconut milk to the chicken. cover and let shimmer. time after time you need to stir the coconut milk & chicken. cook around 30 to 40 minutes in low flame. 

Indonesia sweet bread ( recipe Emak Ellie )

  ** This sweet bread is also wonderful dinner roll or can be used for 
 cinnamon bun. for cinnamon bun the filling use a brown sugar & cinnamon. 

for sweet bread, the filling can be anything. I used chocolate chip, cheese and nutella. it's great weekend activity for kids to get involved in the kitchen helping shapes their favorite bread. **




 Ingredients :
* 500 gm flour, 150 gm sugar, 2 tsp yeast, 90 gm butter, 2 yolks, 1/2 tsp salt, 250 ml warm milk

Instructions:
1- place yeast with 4 tablespoon of warm milk and the rest of  milk used for later on. rest for 5 minutes until see many bubbles
2- use bread machine, kitchen aid mixture or hand knead.  place a flour, sugar, butter, yolks, salt and milk into the bread machine or bowl. 
3- mix or knead the dough until elastic around 10 minutes. then transfer the dough in another bowl. cover with towel or plastic wrap. let's rest for 1 hour in warm room.
4- when the dough rise a double the size. remove it in wood surface and dust with extra flour until no sticky and able to shape it.
5- take a small piece of dough, shape and roll as you desire shape. fill with chocolate or cheese it will be great. 
6- once all the sweet bread shaped in your favorite size. don't forget let them rest again for another 30 minutes. brush the top of bread with egg yolk for shinning color before place them in the oven.
7- preheat the oven 325 degree f. bake the sweet breads until golden brown.

Empal daging - Indonesian sweet friend beef jerky




Ingredients:
2- 3 lbs steak without bone - cut in small square or rectangle shape
3 bay leaves
1 small yellow onion
3 gloves garlic
2 tsp coriander powder
1 tsp tamarind paste
3 tablespoon palm sugar
1 tsp pepper
1 tsp salt
1/2 beef stock cube
5 tablespoon palm sugar 
water

Instructions:

* in boiling water, cook whole beef with salt for about 30 minutes.
* remove from hot water. cut into medium size as your desire size, save 2 cup beef stock 
* smash cooked beef with heavy object. then set a side 
* use blender, add onion & garlic into paste. cook with frying wok with some oil until aromatic
* add bay leave, coriander powder, salt/pepper, beef cube, tamarind paste and palm sugar. put back slices beef and beef stock. cook the beef until the liquid reduced almost dry 
* preheat frying pan with oil. fry the Empal daging until golden brown for both side. 





gulai ayam & egg - Indonesian Chicken curry with eggs


Ingredients

1 whole chicken - cut into 8 sizes 
8 eggs - boiled egg. set a side
2 cans coconut milk
oil to cook

1 large onion
5 medium shallot
8 small gloves garlic
4 cm galanga
1 tsp turmeric powder
5 candle nuts 
4 long big red chilies 
5 red small chilies
6 kaffir lime leaves 
3 lemon grass
4 bay leaves
salt/ pepper

Instructions:
1. blend onion, shallot, garlic, galanga, turmeric, candle nut, chilies into finely paste
2. use a frying wok or medium sauce pan, pour some oil with onion paste. cook until fragrance
3. then add kaffir lime leaves, bay leaves, lemon grass and salt/pepper
4. add pieces of chicken. stir and cook for 5 minutes
5. then add coconut milk to the chicken and boiled egg. stir and cook for 1 hours. time after time stir the chicken because coconut milk can breakout. 
6. serve with jasmine rice and garnish slices cucumber & cooked kale .




chocolate scones




Ingredients :

2 1/2 cup all purpose flour
1/3 cup white sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
6 tsp chilled butter
1/2 cup butter milk
1 egg
1/2 cup chocolate chips
1 tsp vanilla extract

extra : sugar for garnish

 Instructions:
* preheat the oven 350 f 
* preparing baking sheet with wax paper
* in a medium bowl or a food processor. combine flour, sugar, baking powder, baking soda,salt.
 mix for few minutes until dough incorporate with butter.
* then, add the rest of the ingredient, milk, egg, vanilla extract and chocolate chip. mix for another 5 minutes again.
* remove the dough, transfer to cutting surface . shape into a round . cut about 8 slices triangle shape
* place each scone in the baking pan with wax paper. 
* sprinkle with white sugar over the top of scone before bake
* then, bake them for 20 minutes until lightly brown. 
* serve for morning breakfast with cup tea or coffee. 

Mie tek- tek ibu Aan ( indonesian noodle )

 Ingredients
* 1 bag egg noodle ( CAP ATOOM BULAN ) or any kind of egg noodle is fine 
* 1 cup shredded cabbage
* 1 cup bok choy ( Chinese veggies )
* 1 cup cooked shredded chicken
* 4 green chilies - cut thinly slices 
* 2 cooked scramble eggs
* oil 

* 4 shallot
* 5 garlic
* 3 candle nut ( if you can't find, substitute with macadamia nuts ) 
* Salt/ pepper
* 1/2 tsp Chicken cube 
* 4 tsp Indonesia sweet soy sauce 
* 2 cups water ( depend how much liquid you like on your noodle )

Instructions:

1.  in a boiling water and cook the egg noodle until tender, let a side
2.  blend shallot, garlic, candle nut into a paste with little water 
3.  chopped green chilies thinly and fine size
4. preheat frying pan with 5 tablespoon oil. stir fry onion paste until strongly smell and aromatic.
5. add chicken cube, salt/pepper and shredded cooked chicken for another 3 minutes. 
6. pour shredded cabbage, chopped bok choy, cooked scramble egg. mix them until blended . 
7. add sweet soy sauce and cooked noodle. use a tong easily to mix. then add 2 cups water in the noodle.
8.cover for 2 minutes. mix again with a tong.
9. serve with fish cracker and slices tomatoes 


Guacamole


Ingredients
* 3 has avocados
* 1 very small white onion
* 3 jalapenos 
* 3 lime juice
* Salt/ pepper

Instructions:
- into the food processor, place peel onion, 3 avocados with no seed, chopped jalapenos, lemon juice, salt & pepper  
- blend the ingredients until smashed or all the flavor blended. Give a taste & serve with corn chips 

Classic Cheesecake




Ingredients:

* 1 ready made graham cracker crust
* 3 tablespoons butter, melted
* 2 pkg ( 8 oz Philadelphia Cream Cheese, softened )
* 1/2 cup sugar
* 1/2 tsp vanilla extract 
* 2 medium eggs

Instructions:

- preheat oven to 325 degree f 
- in a medium bowl, combine the cream cheese, butter, egg, sugar, vanilla extract
  and eggs. mix the ingredients in low speed until all blended for 7 minutes
- then pour the cream cheese batter into the graham cracker crust.
- bake the cheese cake for 60 minutes until center is almost set and firm. cool in the freeze for 6 hours or over night before eat.

Short bread cookies



Ingredients:

180 gm butter
90 gm sugar
2 gm salt
1 tsp vanilla 
270 gm flour

** extra sugar to sprinkle over the cookies 

instructions:

- preheat the oven to 300 degree f.
- put all the ingredients in a medium bowl, 

- use a electricity mixture then combine the ingredients form to a soft dough.
- wax paper, place the cookies dough and shape to a big rectangle. do not cut yet. then cover with a wax paper. place it in the refrigerator for 10 minutes
- remove the wax paper and place the dough in surface area. cut them small rectangle shapes. use a fork. pock  them in the center twice. 
- place the cookies in the baking tray. sprinkle with sugar over the top before put them in the oven.
- bake them in the oven for 20 to 25 minutes.
- serve with your favorite hot tea. 

Potato donuts - Donut kentang



Ingredients:

500 gm flour
350 gm cooked potatoes ( smashed until fine dough ) 
175 ml warm milk
1 1/2 tsp instant yeast
4 tsp sugar
100 gm melted butter
3 egg yolks 
1/2 tsp salt

topping: 
*melted chocolate chips
*slices almond
*confection sugar
*rainbow sprinkler  

instructions;

- in a big bowl, add flour, cooked potato, yeast, sugar,melted butter, egg yolk, salt and milk. stir the ingredients until blend. the dough should not be sticky and shaggy. 
- then transfer the dough mixture to work surface area,sprinkle a bit of flour over the dough. knead with your hand for about 20 minutes. it allows the yeast to work on dough.
- then put it back again in a bowl, covered with fabric. place it in a warm area for 1 hour to rest.
- after 1 hour later, take the dough in work surface with sprinkle of flour if too sticky. use a wood roller, then cut donuts with donuts cutter. repeat to all
- place them in the big tray and cover with kitchen towel. again, let donuts rest for another 20 minutes
- meanwhile, preheat your frying pan with enough oil. once the donuts enough to rest. start frying each donuts until golden brown for both side
- serve with your favorite topping. 




Fudge Brownies



Ingredients:

1 cup flour
2 eggs
1 cup sugar
1/2 cup chocolate chips + 2 tablespoon milk ( melt it at microwave ) 
1 plain Greek yogurt
1/2 cup water
3 tsp instant coffee
1/2 cup coco powder
1/4 cup butter room temperature
1/4 tsp baking soda
1/2 tsp salt

Instructions:
-1. preheat the oven to 300 degree f, 
-2. meanwhile preparing the brownie mixture. in a bowl, add sugar, egg, yogurt, and butter. use a hand mixture, let all ingredients mix until form to fluffy batter for about 3 minutes. then add the rest of all ingredients. 
- use 9 inch baking pan with wax paper over it, then pour the Fudge Brownies on the baking pan. 
- bake the Brownies in the oven for 325 degree for about 20 to 30 minutes.

Basic pizza Dough


** after 1 hour later, the pizza dough was a double the size **


Ingredients:

1 pack yeast
1 tablespoon sugar
1 tablespoon olive oil
1 tsp salt
3 cup flour & extra for dusting the dough
1 1/4 cup warm water

Instructions:

Add all the ingredient in a bread mixture or food processor for 7 to 10 minutes, or in a medium bowl combine all the ingredients with your hand. then transfer to a flat wood area. use your hand to pressure the pizza dough. knead the dough for about 10 minutes until the dough relaxing and elastic. 

after 10 minutes kneading the pizza dough, transfer it to a medium bowl. cover with a fabric or plastic wrap. let it rest for 45 to 1 hour.

then 1 hour later, it's ready to be used or stored in the freezer. let some extra keep it in the freezer covered with plastic wrap. it can be store up to 3 months.

Greeting Card Cookies



Ingredients:
1/2 cup butter
3/4 cup sugar
1 egg
1 1/2 cup flour
1/3 cup chocolate spread
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt

- in a large bowl, add butter, sugar, egg. beat butter until fluffy. then add chocolate spread, baking powder, baking soda, salt and flour. beat again for few minutes until dough blending well.
- take a cookies dough and cover with a plastic wrap. place it in the refrigerator about 30 minutes to 1 hour until firm enough to shape.

- heat oven to 300 degree. remove the dough from refrigerator. lightly grease cookie sheet.on lightly flour board, roll out of cookies dough, cut to rectangle shapes about 1/4 inch thickness. then carefully place rectangle cookies on cookies sheet.

- bake 8 to 10 minutes or until set. before serve the cookies with frosting. cook 1 to 2 minutes on cookies sheet in order frosting won't melting. design your greeting card cookies as you like such as " best wishes, happy birthday, love mom, love you , we miss you, etc " . let the frosting stay overnight before you wrap for a gift.

Egg and salami salad sandwiches




ingredients:
- 8 cooked whole egg ( cut small pieces ) 
- 10 slices salami ( cut small pieces ) 
- 1 cup a good quality mayo
- 1/2 cup extra olive oil
- 1 tsp a good paprika powder
- 1 tsp ginger powder
- 1 tsp sea salt
- 2 stick celery ( dice very small )
- 4 long hero breads

instructions:
- in a medium bowl, add mayo, oil, paprika, garlic powder, and salt. mix until all combine together. then add chopped egg, salami and dice celery. fold them until all the ingredient incorporate. place it in the refrigerator at least 1 hour before serve.

- cut a hero bread in the middle,  take 3 tablespoon of egg salad place it over the bread. do to all 4 bread.
- grill sandwiches in the pan for both side so get crispy texture.
- serve with salad but i don't have it.


Corn Dogs






   Friday menu for my toddler " CORN DOGS " , it was easy and fast food COOKING MY WAY  at home.
 so impossible no to mess up this menu...it is fun food for children's party, play dates and movie night. it's quick, full of meat and delicious snack for kids. 

My 9 years old son love eating fast food anything from fried chicken, gyro to sandwiches. a cooking fast food at home isn't easy sometime to get the same taste as outside because your toddle tell you if they hate it. 

this time i made the score because they like my corn dog. I cook with my way. Hope you kids like it too. 

Ingredients:

* 1 cup yellow cornmeal
* 1 cup all purpose flour
* 2 tsp baking powder
* 1 tsp sugar
* 1 tsp salt
* 1 cup whole milk
* 1 tsp vinegar
* 2 eggs
* 10 - 15 beef hot dogs

- oil for frying
- wood skewers 
- 1 tablespoon extra flour

Methods:
- preheat the frying pams 
- In a medium bowl, mix all dry ingredients and add wet ingredients. Whisk the batter until smooth and no lump, let a side for 2 minutes while you prepared hot dogs
- Take the wood skewer one by one, place each skewer to the hot dogs. repeat steps until finished. 
- extra flour, place on plate for 
- heat the frying pan with enough oil to cover the corn dog. place a few hot dog in the cooking oil. cooked them until brown. remove and let them cool before serve.
- serve with ketchup or mustard 

French Crepes with Banana & Nutella


Crepe is very thin pancake. the batter is more heavy texture but thinner then original a pancake. the melted butter, egg & milk are making these sweet dessert so delicious yummy. if you are a savory lover, replace the filling with spinach, ricotta cheese, grill chicken or  shredded grill chicken with cheese. 

Ingredients:
* 2 cups all purpose flour
* 2 cups whole milk 
* 8 tsp melted butter
* 1/2 tsp salt
* 1 tsp sugar
* 4 eggs 

filling:
chocolate nutella 
banana
strawberries
jam 
garnish- confection sugar

Instructions:
- in a bowl. add flour, milk, melted butter, salt, sugar and eggs. 
- use a hand mixture or whisk. combine all the ingredient until nicely batter with out lump. 
- then place the batter over the freeze for at least 2 hours before cooked
- cooked Crepe, in a medium crepe pan, glaze with butter or oil in the pan. then pour about 1/4 cup batter. cook both side until little brown. repeat to all batter until finished. 
- how to filling crepes. take one crepe. spread chocolate nutella on the crepes. then add slices banana or strawberries. fold a haft and then fold another haft crepe again
- garnish with confection sugar. serve






Ramen noodle frittata


Ingredients:
- 5 jumbo whole eggs
- 1 medium zucchini - ( chopped small pieces )
- 2 bag instant noodle ( any flavor )
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/2 tsp garlic powder
- oil to cook

Instructions:
- chopped the zucchini into small pieces. set a side
- Heat the cooking pan with oil, pour chopped zucchini over the pan.
 cooked until tender. set a side
- in a small pot with boiling water, cooked instant noodle until soft, then drain them with cold  running water. set a side
- prepared the egg custard, in a bowl, break all eggs, add salt, pepper, garlic powder, cooked zucchini and instant noodle. mix them together until the egg custard incorporated with noodle and zucchini.
- cook the noodle, in a flat pan added cooking oil over the pan. pour the frittata batter. cooked each side until golden brown.
- serve frittata for breakfast or snack. 





Chocolate doughnut maker

Chocolate doughnut maker recipe: 


my lovely kids and their friends created this master piece of chocolate doughnuts. the looks may not please your tummy but believe me it's delicious and so easy to make.



Ingredients:
- 1/2 cup flour 
- 1/4 cup sugar
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup milk
- 1 eggs
- 2 tsp vegetable oil
- 1/4 cup chocolate spread 

frosting:
3 cups confection sugar
1/3 cup shortening
4 tablespoon milk
food colors

Instructions:
- a place all the ingredients in a medium bowl, wish about 5 minutes until the batter incorporated. set a side
- Heat a doughnut machines, and brush with oil all around to avoid from sticking. 
- pour the batter over the doughnut machine until the top. repeat for all. closed the machine until the doughnut ready ( fallow the machine instruction )
- once the doughnut batter is cooked. remove them and repeat to all the batter until finished .
- decorated doughnuts with your favorite frosting and topping.

Egg & salami Borrito Breakfast


     Breakfast made with Burrito " Mexican bread-Tortillas ", full of proteins from the egg & salami. it gives you energize all day for busy work at home or outside. if you have left over a grill chicken or beef just add to your Burrito wrapped. i am sure taste even more delicious . 

Ingredients:
- 4 extra large whole eggs
- 4 soft flour Tortillas
- 1/4 cup shredded Mexican cheese
- 8 slices beef salami
- oil to cook

Instructions:
- Heat non-stick pan with oil.
- whisk eggs in a bowl, then pour them over the non-stick pan. scrambling around until egg cook tenderly and soft. transfer to a plate and let a side
- cook beefs salami in non stick pan with no oil for both side. set a side
- heat Tortillas in the same non-stick pan until little toast for a both side. 
- take one tortillas, add cooked egg, salami and shredded cheese over the tortillas. wrapped it like a cigar. cut in haft. so yummy !  i can eat these " Burito"  for lunch or dinner . I am good!. 
- enjoy 




Chip Yogurt dipping sauce


     The signature dipping sauce at " our house". the kids are enjoying the sauce with any potato chip from the bag to homemade fries. It is so easy in 2 minutes prepared as long as you have ingredients on hand. Don't be scare to experienced a new ingredient,  switch them from spicy to sweet sauce by put a honey instead Chipotle sauce or add some herb will give more aromatic flavor. 
   this inspiring idea came from my daughter who love her ranch dipping sauce with her potato chip. i didn't have that night at home so the reason we made this dipping sauce together. not so bad she said, i like it " MOmmy" .
  I have used Yogurt sauce for chicken sandwich, dipping, or burger. 

Ingredients:
* 6 oz plain yogurt
* 2 tsp chipotle adobo sauce 
* 1/2 tsp a good paprika 
* 1/2 tsp salt
* 1/4 tsp black pepper

Instructions:
- in a bowl, just add all the ingredient together. stir it until spices combined together.
- serve with your favorite chips, fries, vegetables or burger.
