Ayam kalio - Chicken with spicy coconut Gravy


 Chicken Kalio " spicy chicken "  slow cooking process with coconut Gravy and many spices. this cuisine is originally from west sumatra ( padang, indonesia ). it's rich flavor and unique curry chicken flavor. it's one of my favorite dish among other indonesian foods. the unique aromatic from the kaffir lime leaves & lemon grass what make you want to eat more and more this chicken kalio. 




Ingredients:
* 1 whole medium chicken ( cut in 4 sizes ), 2 small yellow onion, 4 gloves garlic, 2 cm ginger root, 1 cm galanga, 1 tsp turmeric powder, 3 candle nuts, 3 star anise, 2 long red chilies, 5 small chilies, 4 kaffir lime leaves, 3 bay leaves, 1 lemon grass, salt/pepper, 1 can a good coconut milk 

Process:
1-  wash chicken well and set a side
2- in blender, put onion, garlic, ginger, galanga, turmeric, candle nut, chilies in blender until turned paste.
3- in cooking pan, put some oil and pour the onion paste. let sauce cook until aromatic. add star anise, kaffir leaves, bay leaves, lemon grass, salt/peper. cook and stir for 2 minutes. 
4- add the chicken and stir about 5 minutes until the chicken absorb the flavor from the sauce  
5- last, add the coconut milk to the chicken. cover and let shimmer. time after time you need to stir the coconut milk & chicken. cook around 30 to 40 minutes in low flame. 

Indonesia sweet bread ( recipe Emak Ellie )

  ** This sweet bread is also wonderful dinner roll or can be used for 
 cinnamon bun. for cinnamon bun the filling use a brown sugar & cinnamon. 

for sweet bread, the filling can be anything. I used chocolate chip, cheese and nutella. it's great weekend activity for kids to get involved in the kitchen helping shapes their favorite bread. **




 Ingredients :
* 500 gm flour, 150 gm sugar, 2 tsp yeast, 90 gm butter, 2 yolks, 1/2 tsp salt, 250 ml warm milk

Instructions:
1- place yeast with 4 tablespoon of warm milk and the rest of  milk used for later on. rest for 5 minutes until see many bubbles
2- use bread machine, kitchen aid mixture or hand knead.  place a flour, sugar, butter, yolks, salt and milk into the bread machine or bowl. 
3- mix or knead the dough until elastic around 10 minutes. then transfer the dough in another bowl. cover with towel or plastic wrap. let's rest for 1 hour in warm room.
4- when the dough rise a double the size. remove it in wood surface and dust with extra flour until no sticky and able to shape it.
5- take a small piece of dough, shape and roll as you desire shape. fill with chocolate or cheese it will be great. 
6- once all the sweet bread shaped in your favorite size. don't forget let them rest again for another 30 minutes. brush the top of bread with egg yolk for shinning color before place them in the oven.
7- preheat the oven 325 degree f. bake the sweet breads until golden brown.

Empal daging - Indonesian sweet friend beef jerky




Ingredients:
2- 3 lbs steak without bone - cut in small square or rectangle shape
3 bay leaves
1 small yellow onion
3 gloves garlic
2 tsp coriander powder
1 tsp tamarind paste
3 tablespoon palm sugar
1 tsp pepper
1 tsp salt
1/2 beef stock cube
5 tablespoon palm sugar 
water

Instructions:

* in boiling water, cook whole beef with salt for about 30 minutes.
* remove from hot water. cut into medium size as your desire size, save 2 cup beef stock 
* smash cooked beef with heavy object. then set a side 
* use blender, add onion & garlic into paste. cook with frying wok with some oil until aromatic
* add bay leave, coriander powder, salt/pepper, beef cube, tamarind paste and palm sugar. put back slices beef and beef stock. cook the beef until the liquid reduced almost dry 
* preheat frying pan with oil. fry the Empal daging until golden brown for both side. 





gulai ayam & egg - Indonesian Chicken curry with eggs


Ingredients

1 whole chicken - cut into 8 sizes 
8 eggs - boiled egg. set a side
2 cans coconut milk
oil to cook

1 large onion
5 medium shallot
8 small gloves garlic
4 cm galanga
1 tsp turmeric powder
5 candle nuts 
4 long big red chilies 
5 red small chilies
6 kaffir lime leaves 
3 lemon grass
4 bay leaves
salt/ pepper

Instructions:
1. blend onion, shallot, garlic, galanga, turmeric, candle nut, chilies into finely paste
2. use a frying wok or medium sauce pan, pour some oil with onion paste. cook until fragrance
3. then add kaffir lime leaves, bay leaves, lemon grass and salt/pepper
4. add pieces of chicken. stir and cook for 5 minutes
5. then add coconut milk to the chicken and boiled egg. stir and cook for 1 hours. time after time stir the chicken because coconut milk can breakout. 
6. serve with jasmine rice and garnish slices cucumber & cooked kale .




chocolate scones




Ingredients :

2 1/2 cup all purpose flour
1/3 cup white sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
6 tsp chilled butter
1/2 cup butter milk
1 egg
1/2 cup chocolate chips
1 tsp vanilla extract

extra : sugar for garnish

 Instructions:
* preheat the oven 350 f 
* preparing baking sheet with wax paper
* in a medium bowl or a food processor. combine flour, sugar, baking powder, baking soda,salt.
 mix for few minutes until dough incorporate with butter.
* then, add the rest of the ingredient, milk, egg, vanilla extract and chocolate chip. mix for another 5 minutes again.
* remove the dough, transfer to cutting surface . shape into a round . cut about 8 slices triangle shape
* place each scone in the baking pan with wax paper. 
* sprinkle with white sugar over the top of scone before bake
* then, bake them for 20 minutes until lightly brown. 
* serve for morning breakfast with cup tea or coffee. 

Mie tek- tek ibu Aan ( indonesian noodle )

 Ingredients
* 1 bag egg noodle ( CAP ATOOM BULAN ) or any kind of egg noodle is fine 
* 1 cup shredded cabbage
* 1 cup bok choy ( Chinese veggies )
* 1 cup cooked shredded chicken
* 4 green chilies - cut thinly slices 
* 2 cooked scramble eggs
* oil 

* 4 shallot
* 5 garlic
* 3 candle nut ( if you can't find, substitute with macadamia nuts ) 
* Salt/ pepper
* 1/2 tsp Chicken cube 
* 4 tsp Indonesia sweet soy sauce 
* 2 cups water ( depend how much liquid you like on your noodle )

Instructions:

1.  in a boiling water and cook the egg noodle until tender, let a side
2.  blend shallot, garlic, candle nut into a paste with little water 
3.  chopped green chilies thinly and fine size
4. preheat frying pan with 5 tablespoon oil. stir fry onion paste until strongly smell and aromatic.
5. add chicken cube, salt/pepper and shredded cooked chicken for another 3 minutes. 
6. pour shredded cabbage, chopped bok choy, cooked scramble egg. mix them until blended . 
7. add sweet soy sauce and cooked noodle. use a tong easily to mix. then add 2 cups water in the noodle.
8.cover for 2 minutes. mix again with a tong.
9. serve with fish cracker and slices tomatoes 


Guacamole


Ingredients
* 3 has avocados
* 1 very small white onion
* 3 jalapenos 
* 3 lime juice
* Salt/ pepper

Instructions:
- into the food processor, place peel onion, 3 avocados with no seed, chopped jalapenos, lemon juice, salt & pepper  
- blend the ingredients until smashed or all the flavor blended. Give a taste & serve with corn chips 

Classic Cheesecake




Ingredients:

* 1 ready made graham cracker crust
* 3 tablespoons butter, melted
* 2 pkg ( 8 oz Philadelphia Cream Cheese, softened )
* 1/2 cup sugar
* 1/2 tsp vanilla extract 
* 2 medium eggs

Instructions:

- preheat oven to 325 degree f 
- in a medium bowl, combine the cream cheese, butter, egg, sugar, vanilla extract
  and eggs. mix the ingredients in low speed until all blended for 7 minutes
- then pour the cream cheese batter into the graham cracker crust.
- bake the cheese cake for 60 minutes until center is almost set and firm. cool in the freeze for 6 hours or over night before eat.
