Lapis sagu ( tapioca layer cake )




ingredients:
* 800 ml coconut milk
* 250 confection sugar
* 300 gm tapioca starch
* 30 gm green bean flour
* 1/2 tsp salt
* Daun pandan paste
* Oil
* green, and red food color

Instructions:
1. bring coconut milk, daun pandan and sugar to a boil for 2 minutes. cook until sugar dissolve. then set a side until to cool down
2. in a bowl, combine tapioca starch, green bean flour, salt and add the coconut milk together. whisk until no lump.
- divide the mixture into 2 or 3 color. drop a few drop green color paste in one mixture, half of mixture is white and small amount of red mixture until end.
- heat your steamer.
- use a deep non-stick pan, grease with oil all around. place the pan in the steamer. drop small amount of green mixture. cook until firmly. repeat to all layer until done. 
- each layer should be grease with oil to avoid not to stick 
- cool the tapioca cake for about 1 hour before serve.
- cut tapioca cake, grease knife with oil in order to cut layer cake
- enjoy your sweet and sticky tapioca layer cake (lapis sagu)
