Tagine Lamb with raisin


Ingredients:
* 1 lb Lamb meat with bone
* 1/4 cup raisins
* 2 gloves garlic
* 1 big onion
* 1/4 cup olive oil
* 1 tsp paprika
* 1/2 tsp ginger powder
* 1 tsp salt
* 1/2 tsp pepper
* 1/2 tsp mix saffron
* water

Methods:
* finely chopped onion & garlic put in the pressure cooker. combine olive oil, paprika, ginger powder, salt, pepper, mix saffron and water
* add lamb meat and combine all spice with the meat with your hand
* Place the pressure cooker in the medium heat. cook until meat tender around 30-40 minutes
* check once a while make sure there is enough water in the pressure cooker every 5-7 minutes
* last 10 minutes add raisin to the meat. closed the pressure cooker and let cook for another 10 minutes or meat becomes very tender.
* add little more water if you like more sauce in the tagine

Pastel isi rendang sapi & kentang


Ingredients:
* 3 cooked potatoes - smashed
* 1 cup beef rendang with sauce - tear the meat
* 10 empanada wraps

Methods:
- In bowl, mix cooked potatoes ( smashed with your hand or fork ), shredded beef rendang. fold the dough until combine together
- take a empanada wrap, and place 1 tablespoon beef & potato filling in the middle
- closed the empanada & fold the side with your hand like in the picture above

Steak with sesame


Ingredients:
* 1 lb steak beef 
* 2 tablespoon sesame oild
* 4 tablespoon light soy sauce
* 1/2 tsp white pepper

garnish: sesame seeds & 1 scallion, extra light soy sauce

Methods:
- In container place the steak 
- add sesame oil, soy sauce, pepper. let marinated in the freeze for 3-4 hours
- heat the indoor grill and brush with oil. wait until grill really hot, then place the steak on the grill
- cook until steak brown and get grill marks for both side around 10 - 15 minutes
- when steak cooked glaze with a couple tablespoons soy sauce and sprinkle with sesame seed & chopped scallion




Bakwan Kepiting ( crab ball soup )


Ingredients:

Soup:
 * 2 bowl water
 * 2 tsp masako ( beef stock )
 * 3-4 medium shrimp ( chopped )
 * 3 garlic ( chopped )
 * 150 gr carrot ( cut into thin julienne )
 * 200 gr bamboo shoot ( cut into thin julienne )
 * salt/ pepper
 * oil
 *  2 tablespoon chopped cilantro

for crab ball:
 * 200 gr cooked crab meat
 * 100 gr shrimps ( puree )
 * 1 tablespoon sesame oil
 * 1 tablespoon soy sauce
 * salt/pepper
 * 3 tablespoon tapioca

Methods:
- Heat oil in a soup pot. add chopped garlic, and chopped shrimps and fry until little brown.
- add bowls water, salt & pepper in the pot, then add masako ( beef/chicken stock ), let it boil for few minutes
- mean while preparing for crab meat. in bowl mix cooked crab meat, puree fresh shrimp, sesame oil, soy sauce, salt/pepper & tapioca. use your hand mix until all ingredients combine together
- Form mixture into walnut sized balls, drop crab ball in the soup pot. add bamboo shoot and carrot. cook for  7-10 minutes
- garnish with cilantro

Black berries & raspberries smoothies



Ingredients:
* 1/2 cup black berries
* 1/2 cup raspberries
* 2 cup orange juices
* 6 ice cubes

Methods:
* place black berries, raspberries, orange juice and ice cubes in the blender
* blend all together until smooth
* pour the smoothie in the cup. serve nicely in the summer day or breakfast

Water melon juice


Ingredients:
* 1 cup cut water melon
* 1/2 cup mineral water
* 3-4 ices
* 2 tsp honey
* 1/2fresh  lemon juice

Methods:
* Place water melon, lemon juice, honey in the blend until puree
* pour the juice in the cup, add mineral water & ice 
* nice refreshing drink for summer

Ingredients:
* 3 Pita bread
* 3 tablespoon ricotta cheese
* 1 long hot green pepper
* Black Olive
* red/green pepper
* 1/2 lb slices white mushroom
* tomato sauce
* white sauce - made with flour, parmesan cheese, milk, nugmet, butter, salt & pepper
* shredded mozarella cheese

Methods:
- take one pita bread one a time,
- put 2-3 tomato sauce into the pita bread or white sauce
- add ricotta cheese, green/red pepper a couple slices & black olive
- or put your topping with green hot pepper & white mushroom
- then sprinkle with generously mozzarella cheese
- place pizza in the oven, cook until topping soft & cheese melt about 15 minutes

Beef Rendang




Ingredients:
* 2 lb beef tenderloin 
* 800 ml coconut milk
* 3 - 4 red hot peppers
* 1 turmeric leaf
* 1 lemon grass
* 4 kaffir lime leaves
* 1medium  onion
*  4 gloves garlic
* 2 cm galangal 
* 3 cm ginger
* 2 cinnamon sticks
* 1/4 tsp cardamon powder
* pitch nutmeg
* 1 1/2 tsp salt
* 1/2 tsp pepper

Methods:
- Cut beef  in a bite size or your desire size then wash in cold water
- Place onion, garlic, hot pepper, galangal, ginger in a blender, then pulse until mixture paste
- Heat the deep pan with oil, pour the mixture paste into the pan, add lemon grass, kaffir lime leaves, cinnamon sticks, cardamon powder, nutmeg, turmeric leaves, salt & pepper . cook about 3-5 minutes
- then add dice meat in the sauce, cook another 5-6 minutes
- add coconut milk let the meat cook until tender about 1 1/2 hrs to 2 hrs. 
- don't forget to keep stir the meat once a while so the sauce cook nice & thick
- serve with jasmin rice

Chicken Parmesan with pasta


Ingredients:
    A- Tomato Sauce
     * 5 whole fresh tomato - boil & take skin off
     * 1 medium onion
     * 4 gloves garlic
     * 4 oz tomato paste
     * 2 tsp sugar
     * 1 1/2 tsp sea salt
     * 1 bay leaf
     * 1/2 tsp pepper
     * 1 tsp oregano

    B- Chicken parmesan
     * 3-4 chicken breast
     * 2 eggs
     * bread crumb
     * 1/2 cup flour
     * salt 
      * pepper

  C- any Pasta 

Instructions:
 A:
* Boil the tomatoes in pan until skin is opened. take the skin off and chopped very fine. 
* Chopped onion & garlic very fine
* use a deep skillet with olive oil. add chopped onion, garlic & chopped tomato
* add tomato paste, salt, pepper, bay leaf, sugar, oregano. cook until simmer. meanwhile break the tomato almost puree while cooking. Let aside until chicken parmesan ready

B:
* Clean chicken breast with cold water then dry it off with paper tower
* take chicken breast one at time, first crack & wisk the eggs and place in wide bowl or plate
* take flour in a plate, and bread crumb in another plate
* first take one chicken breast. dip chicken with an egg + then code it bread crumb+ and then dip again egg + last dip it in flour
* fry with some oil until both side turned brown

C: 
* cook pasta about 8-9 minutes until al-dante
* place pasta in a plate,+ add tomato sauce  over the pasta
* add fry chicken 
* sprinkle with shredded Parmesan cheese and mozzarella cheese
* put extra tomato sauce over the cheese

Nasi goreng ikan asin ( fried rice with salted fish )


Ingredients:
* 200 gr salted fish
* 2 bowls cooked rice
* shrimp paste
* 4 eggs - scramble egg
* 4 scallion - chopped
* 1/4 cup frozen peas
* 2 tsp sweet soy sauce
* 1 tsp soy sauce
* 1/2 tsp pepper
* oil to cook

Instructions:
- fry the salted fish with some oil, then shredded in small pieces
- Heat wok with oil, make scramble eggs, then add shredded fish, shrimp paste, frozen peas, sweet soy sauce, soy sauce, pepper and cooked rice. stir the rice until all ingredients all mix together

Macaroni & cheese


Ingredients:
* 1/2 lb elbow macaroni 
* 1 cup whole milk
* 1/4 cup heavy cream
* 1 egg york
* 1 cup shredded cheddar cheese
* 2 tsp Parmesan cheese
* pitch of nutmeg
* 2 tsp butter
* pitch black pepper
* pitch salt
* shredded mozzarella cheese

Instructions:
- Cook the macaroni until al dente for about 8 - 10 minutes
- Mean while, heat deep skillet with oil & butter
- add milk, heavy cream, shredded cheddar cheese, Parmesan cheese, nutmeg, pitch pepper, pitch salt. when all mix together then add cooked macaroni pasta to the sauce
- stir until sauce & pasta get thicker cook until 3-5 minutes
- then transfer to the baking dish, sprinkle over the top with shredded mozzarella cheese
- Cook the baking dish in the hot broiler until cheese turning brown

Ayam Goreng Kalasan


Ingredients:
- 1/2 chicken
- 1 1/2 cup coconut milk
- 3 gloves garlic - grated
- 1 tsp salt
- 1/2 tsp pepper
- 1/4 tsp baking soda
- 1 cm galangal - smashed/ or cracked
- 1 bay leaf
- oil for frying

Methods:
- Clean & wash chicken well, then cut into 2 pieces
- In a pot, mix chicken with coconut milk, grated garlic, salt, pepper, baking soda, cracked galangal & bay leaf
- cook until chicken until tender & flip the chicken once a while 
- let all spices with chicken marinate together about 20-25 minutes
- turn the chicken once a while to get 
- once chicken cook, drain the extra liquid 
- Heat oil in the frying pan with enough oil to fry. 
- Fry chicken until golden brown and crispy

Mini BBQ Chicken Burger


Ingredients:
* 1 lb ground chicken ( thigh & legs meat )
* 1 tsp paprika
* 3 tablespoon BBQ sauce for burger & extra for sauce
* 1 tsp coriander seed
* 1 tsp salt
* 1/2 tsp pepper
* Mini buns - any regular burger make in small bun with cookies cutter
* Lettuces

Methods:
- In bowl mix ground chicken, paprika, BBQ sauce, coriander seed, salt, pepper combine all ingredient until mix together
- Once meat and spices mix then shape mini burgers with your hand
- Heat your indoor grill or pan with some oil. place a few burger at a time then cook until dark & grill mark for both side around 7-8 minutes
- take a mini bun + layer with lettuce + place cooked burger with extra BBQ sauce over the top then serve

Tagine breast of lamb with chick peas


Ingredients:
* 2 lb breast of lamb
* 1 can chick peas
* 1 onion
* 2 gloves garlic
* 1 tsp paprika
* 1/2 tsp ginger powder
* 1 tsp salt
* 1/2 tsp pepper
* 1/2 tsp some saffron
* 1 tsp parsley
* 1/4 cup olive oil
* 1/2 lemon preserve
* 2 bowl water

Methods:
* chopped the onion, garlic and parsley
* In pressure cooker, put meat, onion, garlic, paprika, ginger powder, salt, pepper, some saffron, parsley and water. let it cook 30-35 minutes until meat becomes tender.
* then add chick peas & slices preserved lemon with the meat in the pressure cooker. let it cooks for another 10 minutes. add more water if necessary
* serve with bread

tauco udang & telur puyuh ( salty soy bean paste cooked with shrimps & quail eggs )




Ingredients:
* 3 shallots
* 2 garlics
* 1 bay leaf
* 1 lemon grass
* 2 tsp salty soy bean paste
* 1 red hot pepper
* 3 green hot pepper - cut slices
* 1/2 lb shrimps
* 200 gr quail eggs
* pepper
* salt
* oil

Methods:
- Blend shallots, garlics and red hot pepper in food processor until soft
- then clean shrimps and take skin off. let a side
- cut slices the green hot pepper  and let a side
- Heat the pan with some oil, suate the shallot paste with garlic, & salty soy bean paste about 2-3 minutes,  then add salt & pepper
- then add shrimps, slices green hot pepper, and quail eggs. let it cooks about 6-8 minutes
- serve with jasmine rice

Gulai Buncis & daging ( coconut soup with string beans & beef )


Ingredients:
* 2 bowls coconut milk
* 300 gr string beans
* 1/2 lb diced meat
* 3 chilli
* 2 shallots
* 2 gloves garlic
* 1 cm ginger root
* 1 cm galanga
* 2 tsp turmeric powder
* 1 bay leaf
* turmeric leaf
* 1/2 tsp masako ( option )
* salt & pepper
* oil

Methods:
- diced the meat in small pieces. cook with water until very tender. then let aside
- Mean time, cut slices string bean
- Blend chilli, garlic, shallots, ginger root, galanga, & turmeric
- fry the sauce in a soup pot with 3-4 tsp oil, add bay leaf, turmeric leaf, salt and pepper for 5-6 minutes
- add diced meat and string beans and coconut milk. let it cook about 10 minutes
- you have to stir until coconut and sauce mix together
- serve with rice

Moroccan Beetroot Salad

Ingredients:
* 650 gr beetroot
* 2 tsp white vinegar
* 3 gloves garlic
* 2 tsp olive oil
* 1 tsp salt
* 1/4 tsp pepper
* 2 tsp parsley

Methods:
- Peel a beetroot skin and cut small pieces
- Poach beetroots in pot, and cook until totally tender
- Meantime, preparing for sauce, mix vinegar, olive oil, salt, pepper, crack & chopped the garlics and parsley chopped mix together in a bowl
- when beetroots cooked mix with the sauce until combine together
- can be serve cold or hot salad

Sate ayam ( indonesian chicken kebab )


Ingredients:
A:
* 1 1/2 lb boneless thigh chicken
* 4 tablespoon sweet soy sauce
* 1/4 tsp pepper
* 3 gloves garlic
* 3 shallots
* 3 tablespoon oil or fat oil from chicken
* salt

B: sauce
* 5 tablespoon peanuts
* 3 shallots
* 3 gloves garlic
* 4 candle nut
* 10 chillies
* 3-4 kaffir lime leaves
* 3 - 4 tablespoon palm sugar
* salt
* water
* oil
* white pepper

peanut sauce



Methods:
- wash chicken in cold water and cut small pieces in a bite size. place chicken pieces in bowl.
- Cut slices shallot and smash garlics and add to bowl with chicken.
- add sweet soy sauce, salt, pepper. let chicken marinated about 3-4 hours,  and keep in the freeze.
- Once chicken has been marinated, take a wood skewer and place 4-5 pieces of chicken in the skewer.
- heat the stove in medium fire  
- then put an indoor grill over the stove, and grease with oil let it grill sizzling. that's mean ready to grill
- Place 6-8 pieces kebab over the grill. let cook and until grill marks for both side around 20-30 minutes
- Mean while, make the peanut sauce.
- fry peanut in pan with oil until little brown. then take it out.
- mix all ingredient B in food processor. Blend until all spice very smooth and well combine 
- Heat the pan with 3-4 tablespoons oil, then pour the peanut paste. let cook until peanut paste turning very brown and become oily 
- add more water if necessary. keep stir until done
- how to serve, take a couple pieces kebab and pour peanut sauce over the chicken kebab and add more sweet sauce.
