Simple tagine fish mackerel



So simple, and so healthy. I hope you enjoy this recipe !!.

Ingredients:
1 fish ( I use boston mackerel )
1 carrot
1/2 lemon
1 onion
1/2 tsp cumin
1/2 tsp paprika
1/2 ginger powder
1 tablespoon parsley ( chopped )
Salt
Pepper
1/4 cup olive oil
Water

Method:
Cut fish into half and washed it, let a side. Cut carrot in 4 sizes, then slices onion like an onion ring.
Preparing sauce for tagine, combine cumin, paprika, ginger, salt, pepper and olive oil in a bowl.
Then marinated the fish with sauce for 5 minutes ( or you don't need too, but I like more flavor on the fish ). After fish has been marinated. Place slices onion ring in the tagine, the add fish over the onion. Place slices carrot any way you like. Put slices lemon for each fish. Pour remain the sauce over the fish and add a little water about 1/4 cut. Place the tagine ( clay dish ) on the stop, cover and cook for 10 minutes in low heat, time after time check the fish and use a spoon pour some sauce from the tagine over the fish and carrot. Let a cook until sauce almost disappear .

Funnel Cake


Funnel cake is one of sweet treat find in any carnival or street festival any where in United States every summer. now you dont need to wait until summer to come.you can make this sweat treat all year a long at home with few ingredients with quick, easy and cheap making. 
our experienced eating this funnel cake in NYC. I took my children to this carnival in NYC where rides, street foods and board walk by the beach. eating funnel cake still warm, sugary fluffy cake. my kids ask for more...and more. 
sweet, crunchy fluffy dough with a vanilla aroma & just fun foods to share. since then we eat when friends come or fun day at home.



Ingredients:

1. 1 1/4 Cup Flour

2. 1/4 Cup Sugar
3. 1 Tsp Baking Powder
4. 1/2 Tsp salt
5. 1 Tsp Vanilla Sugar
6. 1 egg
7. 1 Cup Milk
8. Oil to fry

Decorations:
- Confection sugar
- Vanilla sugar



Directions:

   In a medium bowl, beat eggs, sugar, water and milk slowly then add flour, baking powder, 
and salt. let all components  mix  and no lump. Pour cake batter in to Funnel. If you do not 
have a Funnel, used a Ziploc bag, cut one of the corner.  
Heat oil with frying pan. bring funnel batter closely to oil, start pour the batter by moving in 
circulation motion to created spiral shapes. cook both side until golden brown. repeated the 
step until batter finished. let them cool for few minutes, top with confection sugar or vanilla 
sugar.

Asinan mangga ( spicy manggo pickle )


Ingredients

2 manggo ( best used a hard manggo )
3 tablespoon sugar
4 tsp white vinegar
6 small red chillies
1 large red chili
2 tsp salt
4 cup water



Method:
- place the water, salt, vinegar, sugar in a pot, cook until boil and set a side until cool down
- blend chillies ( chopped very fine ) and set a side
- cut and slices mango thinly so quick marinated
- in container or jar, pour cooked water, chopped chillies and slices mango.
- place the mango pickle in the freeze for overnight

Yellow split Peas Soup




Ingredient:
* 1 1/2 cup dried yellow split peas
* 3 small bowl of water or chicken stock
* 1 medium onion, chopped
* 4 gloves garlic, chopped
* salt
* pepper
* 1/2 cup home made tomato sauce or tomato paste
* 2 tsp curry powder
* oil

Method:

- rinse peas in warm water, set a side
- pre-heat stove. in a medium pot, pour oil, chopped onion and garlic. saute them until aromatic for about 1 or 2 minites. then add curry powder to the onion. stir quickly don't let it burn.
- add dried peas, water or chicken stock, salt, pepper, and tomato sauce to the onion pot.
- cover and simmer in low heat until peas are tender.
- add more water if neccessary. Top with grill bread, croutons or pita bread, if desired.
- enjoy while warm.

Almond Cake



most easy and super delicious cake i found a new recipe " Almond cake ". it is full of nutty flavor.  so yummy enjoy with hot tea or coffee. my friends and family never get enough eating this cake.

I have made it many times  for my friends and family. i decided to share at my food blogger for all of you to try.

Ingredients:


110 gm butter

120 gm sugar
3 large eggs
90 gm ground almond
40 gm flour
1 tsp baking powder
1 tablespoon milk
1 tsp vanilla sugar 


*** you need for garnish: slices almond and confection sugar***

Method:

  1.  Pre-head oven to 200 - 225 degree. 
  2.  Place  eggs, butter, sugar in a medium bowl. then beat with electricity mixer until fluffy and light airy.  add ground almond, flour, baking powder and sugar, then mix again for a couple minutes until all ingredients well combined. 
  3. Baking pan, grease all around the pan and dust with little flour. then pour the almond cake batter over the baking pan. spread cake batter evenly. sprinkle with slices almond over the top.
  4. Bake for 30 to 40 minutes until cooked and brown over the top. to double check use a tooth pick, place it in the middle of cake. if it's wet continue to cook again for few minutes.
  5. Once the cake cooked, removed from baking pan and place in baking rack for 5 minutes. dusting with confection sugar 
  6. cut the cake as your desire and serve with tea or coffee.

Pisang Molen ( Banana wrapped in flour dough )



                LOVE the flaky and buttery taste this banana fritter. enjoy with some hot tea or coffee in the morning or afternoon relaxing... second time made this recipe so far so good no regret its work with my mouth. I used 4 medium plantains enough for every one and more left over for next day breakfast me and my husband.  good luck trying :)

Ingredients:

* 4 banana ( sweet & soft plantains )
* 200 gr all purpose flour
* 80 gr butter
* 4 tablespoon sugar
* 1/2 tsp salt
* 100 ml cold water
* 40 gr  maizena

Kue pukis



Ingredients

* 3 eggs
* 100 grm sugar
* 1/2 tsp instant yeast
* 1/4 tsp baking powder
* 180 ml warm coconut milk
* 150 grm all purpose flour
* 1/2 tsp vanilla

Topping: chocolate sprinkler, cheese, or chocolate Dough

Method:
 1- In a big bowl combine eggs and sugar, mix them with hand mixture for about 2 minutes, the add yeast, coconut milk, vanilla and flour. Let the ingredient mix for another 5 minutes until you will see many bubbles and color turned light yellow.
2- Let the batter to rest in warm room temperature in 40 minutes before cooked.
3- Preheat the Pukis cake mole in top stove, grease each pukis mole with butter or oil. Pour the batter and cover , let the cooked half through then top with chocolate sprinkler or cheese as your taste, cover again the pukis cake until brown.

Enjoy eating while still warm.

Tilapia Goreng Ketumbar




Ingredients:

* 1 fresh Tilapia
* 1/2 tsp ground coriander
* 1 tsp salt
* 1/2 tsp pepper

* oil to fry
* fish soy sauce for dipping

Directions:
- Clean & cut the meat 3 slices each side
-  In a plate mix ground coriander, salt & pepper, marinated the Tilapia for 20-30 minutes before frying.
- Preheat a deep pan with oil. Fry fish until golden brown for both side
- Garnish with Vegetables and fish soy sauce .

Beef Burger and vegetable spread



Ingredients:

* 1 lbs ground beef
* 1/2 tsp paprika
* 1/2 tsp cumin
* 1/2 tsp pepper
* 1 tsp salt

Vegetables Spread

* 10 mix seedless olive
* 1 tablespoon vegetables spread ( you can find in European store  or made with roasted red bell pepper, egg plants & hot pepper )
* 2-3 table olive oil

* 1 long Italian Bread
* slices onion

Direction:

- in a bowl, mix ground beef, paprika, cumin, pepper and salt. combine all the ingredients. let beef marinated for 10 minutes, keep in the freeze before grill
- shaped the burger and flat it out to 7-8 small burgers
- Cook the burger in a grill pan with oil
- Preparing Vegetables spread. chopped mix olives very fine. then mix with vegetable spread and olive oil.

- Preparing sandwiches, Cut bread in a half, spread the vegetables spread over the bread
- Place the mini burgers, add slices onion. then extra vegetables spread over the burger again.
- Fore extra crispy, grill the bread in the pan for both side in a couple minutes
- Serve with french fries

Tagine Veal with apricots




Ingredients:

* 1 1/2 lb veal
* 1 large onion
* 4 Gloves of garlic
* 1 tsp salt
* 1/2 tsp paprika
* 1 tsp ginger powder
* 1 tsp pepper
* 1 stick cinnamon
* 1/2 tsp saffron
* 1/4 cup olive oil
* 2 cup water
* 20 dried apricots


Directions:
- Cut veal into 5-6 pieces
- Chopped onion & garlic very fined.
- Preheat the pressure cooker or saucepan over medium heat. saute the chopped onion and garlic for 5 minutes
- then add the rest of ingredients to the pressure cooker, except dried apricots
- Cover the lids and let it cooked in 20-30 minutes until meat become tender
- Open the pressure cooker and add the dried apricot to the meat. cook again for another 7-8 minutes. open the pan
- Served Tagine with bread

Cinnamon - Sugar Twists w/ caramel dipping



Ingredients:
- 2 sheets frozen puff pastry - put in a room temperature for 30 minutes
- 3 tsp ground cinnamon
- 1 tsp Vanilla Sugar
- 2 tsp sugar

Caramel dipping sauce:
- 1/4 cup dark corn syrup
- 1/4 cup whole milk
- 1/2 cup light cream
- 1 tsp sugar
- 1/2 tsp corn starch
- 2 tsp water
- pitch cinnamon

Directions:
1- Line 2 baking sheets with parchment paper
2- Cut the pastry into a long strips.  then twist each strips 4 or 5 times, pressing the end down.
3- Place the puff pastries in a baking sheet. Bake then in the oven 15-20 minutes until each side golden brown.
4- Mean time, preparing the dipping sauce, Preheat saute pan with 1 tsp sugar until really dark. then quickly add, cream, milk, corn syrup and pitch cinnamon. stir until the ingredients completely melt and no lump
5- in a cup, combine the corn starch with water. then add it to the caramel sauce. stir again for 1-2 minutes until sauce become a very thick and creamy.
6. Serve with delicious cinnamon twist and caramel sauce

Peach & Pear Cobble


Ingredients:

Filling:
* 2 Pears
* 3 Peaches
* 3 tablespoon brown sugar
* 1 tablespoon corn starch
* 1 tsp ground cinnamon
* pitch of salt
* 4 tablespoon butter - melted

Dough
* 1 1/2 cups all purpose flour
* 2 tsp baking powder
* 1/2 tsp salt
* 1 1/2 stick cold butter - diced small pieces
* 3/4 cup light cream

Garnish:
- whip cream
- ice cream

Directions:
1. Wash & peel the Pears & Peaches's skin.
2. Cut in small sizes
3. Combine all the Filling ingredients in a bowl. mix well with hand until fruits evenly mix with  sugar and cinnamon
4. Once it combine all the ingredients, let it aside
5. Mean time, preheat the oven to 375 degree F.
6. In a medium bowl, combine the all dough ingredients together, work with your hand until butter, cream and flour mix together. the dough should be very thick and sticky
7. In a Pie Pan, transfer melted butter in the pan. should be cover with melted butter.
8. Then pour slices fruit filling in a pie pan
9. second layer,  pour the dough mixture over the top of fruit. should be cover the fruits with a dough
10. Place it in the oven for 45 minutes until top cook to golden brown
11. served with whip cream or vanilla ice cream

Serabi ( Indonesian coconut pancake )


Ingridients:
* 200 gm Rice Flour
* 50 gm Tapioca Starch
* 1 tablespoon Flour
* 650 ml Warm Coconut Milk
* pitch Salt
* 1 tsp Baking Powder
* 1 tsp Yeast

Coconut & Palm Sauce w/ Durian
*200 gr Palm Sugar
* 2 tablespoon sugar
* 500 ml coconut milk
* 100 gm Durian
* pitch salt
* 2-3 Pandan leaves

Directions:
1. Combine the Dry Ingredients  in a Bowl: Rice Flour, Tapioca Starch, Flour, Salt, Baking Powder & Yeast
2. Use a hand mixture, Pour a Coconut Milk a little by little along with Dry Ingredients for 15 Minutes until all Smooth and No Lump.
3. Cover The Dough with fabric. let it to rest in a Warm Temperature for 40 minutes - to 1 hour
4. Preheat the Stove in a medium heat,
5. In a non stick Pan. Pour the Serabi dough in non Stick pan until cook
6. Mean time, cooking the coconut sauce by mixing all the ingredients a small soup pot
7. Let the Sauce Cook Until to bubbling for about 15 minutes.
8. Serve Serabi with Coconut Sauce while warm

Lasagna with spinach



Ingredients:
* 8 ounces lasagna noodles
* 1 pound ground beef
* 24 oz jar marinara sauce or any tomato sauce
* 1 pound frozen spinach - refroze spinach
* 2 cups ricotta cheese
* 2 cups shredded mozzarella cheese
* 1/4 cup parmigiana cheese - grated
* salt and pepper ( for taste )
* oil

Instructions:
1. Bring a big pot to boil and cook the noodle to al dante not fully cooked or fallow the direction behind the box. Drain and set a side
2. a big bowl mix ricotta cheese with spinach and grated parmigiana cheese, then add some salt & pepper. set a side
3. Coat a deep skillet with oil in medium heat. add a ground beef, salt and pepper and cooked for 5-6 minutes. stir occasionally
4. add the marinara sauce to the beef. stir occasionally for ingredients mix together
5. remove the sauce from the skillet and place the sauce in a bowl. set a side
6. to assemble lasagna, put a couple spoon marinara sauce in baking dish. arrange noodles over the sauce.
 put 2-3 tablespoon a ricotta and spinach mixture on the noodle. add marinara sauce and sprinkle mozzarella cheese. repeating the steps until finished.
8. a last layer put an extra shredded mozzarella cheese and parmigiana cheese. cover the noodle with foil. bake in the oven until bubbling. last 5 minutes remove the foil and returned the lasagna to oven. cook until cheese golden brown.

Ketan sambel lingkung ( ketan abon ikan )



Ingredients:
- 2 1/2 cup sticky rice
- 1 1/2 cup good coconut milk
- 1 tsp salt
- 1 bay leaf

- 1/4 cup abon ikan

Methods:
- wash and drain the sticky rice from liquid
- Mix the coconut milk, bay leaf and salt. let them soak for about 10 minutes
- in a medium pot, cooked sticky rice with coconut milk for 10-15 minutes or until no more liquid
- then transfer the sticky rice to the steamer. let its steam for about 20 minutes or 30 minutes until cooked tenderly, soft and sticky
- shaped sticky rice with a round mole, place 1/2 tsp abon ikan and filled the rest of mole with sticky rice. press hard until covered with rice to the top
- in a plate, remove the mole. repeat the step until finished.

Udang goreng cuka ( fried shrimps with vinegar )



Ingredients:
* 1 lb frozen shrimps
* 1 tablespoon white vinegar
* 1 tsp salt
* 1/2 tsp pepper
* 3 gloves garlic - grated
* 3 tablespoon oil

Instructions:
- In a bowl, mix all ingredients, except oil.  then let shrimps marinated for a couple minutes
- Meantime, heat the pan with some oil until very hot
- drop the marinated shrimps to the pan and let cooked until shrimps turned a pink color for about 5-7 minutes.
- served with soy sauce or hot sauce dipping

sambal hijau



Ingredients:
* 1 lb long green chilies / jalapeno pepper
* 5 small green chili
* 1 head garlic
* salt
* msg
* oil

Instructions:
1. boil all the green chili for 8-10 minutes
2. drain water, cut chilies in a half then chopped very fined
3. blend the garlic until very soft almost puree
4. Heat the cooking pan with oil, then saute the garlic for 1-2 minutes
5. add chopped green chilies to the pan. add salt, and msg. stir until cooked for 5-7 minutes
6. serve with any Indonesian dish

Gulai daun singkong/ kale ( spicy kale cooked with coconut milk )



Ingredients:
* 1.5 lb casava leaves or kale leaves
* 600 ml coconut milk
* 1 small onion
* 4 red long chili
* 4 gloves garlic
* 2 cm galanga - smashed
* 2 cm ginger
* 3 kaffir leaves
* 3 bay leaves
* 1 stalks lemongrass
* 1 tsp shrimp paste
* 1 chicken stock cube
* salt
* pepper
* oil

Instructions:
1. cooked the cassava leaves/ kale in the boiling water until soft and tender. take leaves and squeeze no liquid, then chopped into a big size

2. in a food processor, blend the ingredients, onion, garlic, chili and ginger until soft
3. Heat the pan with oil then pour the puree ingredients with add,  kaffir leaves, bay leaves, shrimp paste, chicken stock cube, and galanga cooked until aromatic for 3 minutes
4. then add the chopped leaves to the sauce. stir until incorporated together
5 add coconut milk, salt, and pepper. keep stir and cooked for 10-15 minutes until coconut milk reduce in a half

Pasta with tomato sauce, hot dogs & mozzarella



Ingredients:
* 1 jar marinara sauce
* 1 box pasta
* 1 pack hotdog - cut a small
* 1 tsp chili flakes
* 1 small onion - chopped
* 3 gloves garlic - chopped
* 1/2 tsp dried oregano
* 1/2 tsp salt
* 1/2 tsp pepper
* 1/4 cup olive oil

Garnish
* parsley - chopped
* Shredded mozzarella cheese

Instructions:
- cook the pasta al dante - or fallow the instruction behind the box
- Heat the deep skillet over the medium heat with olive oil, add chili flake, chopped onion, garlic until caramelize for 3-5 minutes.
- add the marinara sauce, slice hot dogs, dried oregano, salt, and pepper in a skillet. stir to evenly coat then add cooked pasta to the sauce. toasted coat for 5 minutes
- garnish with chopped parsley & shredded mozzarella cheese over the pasta while it's hot.
- serve immediately
