Baghrirs - Moroccan crepes





( the kids were having fun in the -
kitchen preparing Baghrirs - crepes  at her aunt house)

Ingredients:
- 2 bowl fine semolina
- 1 tsp salt
- 2 tsp baking powder
- 2 1/2 bowls warm water
- 1 tsp sugar

sauce:
- butter
- Honey

Instructions:
- use a blender, put all the ingredients into the blender or a mixing bowl. 
- blend them for about 5 minutes until to form lots of bubble in the batter
- pour the batter in a medium bowl, stir with a ladle before cooking
- preheat a non stick pan in very hot temperature
- pour quantity of crepe batter into the pan. wait few minutes until all around the crepe make lots of hole. repeat to all batter until done
- serve hot with melted butter and honey over the Baghrir ( crepes )

Kefta Mkaouara { Tagine beefballs with eggs }

Kefta Mkaouara is famous dish in morocco with tomato sauce. Since I am not a big fan of tomato so i used only 1 tomato. you can use any ground meat as you like. 



( the video inspired me, so i made Tagine beef balls in my way 
but you learn preparing Tagine from this video so much )

Ingredients:
* 1/2 lb ground beef
* 3 eggs
* 1 onion - chopped very small 
* 1 tomato - chopped
* 1/4 cup olive oil
* 3 gloves garlic - chopped 
* 1/2 tsp cumin
* 1/4 tsp paprika
* 1 tsp salt
* 1 pepper 
* 1/2 tsp ginger powder
* 1/2 tsp turmeric
* 1 cup cilantro and parsley - chopped very small 
* water

Method
- in Tagine clay or use cooking pot, cook chopped onion and garlic with olive oil until soft and caramelize. then add chopped tomato and some cilantro parsley. 
- mean while, preparing meat balls, in a medium bowl. place ground beef with cumin, paprika, salt, pepper, ginger powder, turmeric and chopped remaining parsley cilantro
- combine beef ball with spices very well, then make a small a beef ball. repeat for all
- drop beef balls in the tagine mix onion. add little water, cook for few minutes until tender then drop eggs over the kefta. cover the tagine and cook for another 3-5 minutes.
- serve with bread. 

Meloui ( Moroccan Pancake )


( the video above, i found in you tube so you can making Meloui easier
 by looking at video. Many steps to preparing Meloui,
 especially folding the dough. it needs to be right)

( my result made a Meloui for the first time but not to bad. I have eaten them
 many times at 
my sister-in law. she is the expert making Meloui. ) 

Ingredients:
  -- for the dough --
* 3 cups flour
* 1 cup semolina
* 1/4 tsp yeast
* 1 3/4 cup water - or little less
* salt
-- For folding msemen --
  * 3/4 cup vegetable oil
  * 1/2 cup soften Butter 
  * 1 cup semolina flour 
serve with honey and butter 

Directions:
* In a bowl, place a yeast with 1 tsp water then let yeast to rest 5 minutes to form bubbling 
* Mix the dry ingredients in another bowl with add some water little by little, then mix together with yeast. add more water if necessary.
* make the dough not too sticky but easy to knead with your hand. 
* Knead the msemen dough in a bowl or cutting wood with four surface for about 10-15 minutes or transfer dough to stand mixer for 5 minutes until a dough become smooth and elastic 

* Make the dough into a small ball, the size of small apple or plum, use oil on your hand to avoid sticky
* make as much as small balls, then cover with towel or fabric let them rest 15 - 20 minutes 

How to folding the Meloui
* use a big flat plate or work on wide open wood area and grease with oil to
 avoid from stick
* Mix ingredients for folding meloui except semolina, soften butter and vegetable oil mix together in a small bowl
* take a ball of dough, then flat it out into a large rectangle shape with oil on your hand and surface
* grease with some mix oil and butter on the flat dough, then sprinkle a little semolina flour
*  fold the dough like you fold a letter both a side. stretch the dough in the cutting board. pitch with your finger.then roll from down to up until end. flat it out shape like circle.
* heat a flat pan with no oil, cook Meloui until golden brown for both side. repeat for all
* serve with butter and honey. 




Cream cheese, jelly and candy bar with wonton wrap


 ingredients:
- 20 wonton wrap
- cream cheese
- jelly ( any flavor )
- 10 small candy bar ( cut into half )
- oil ( for frying )
- confection sugar 

directions:

1. take one a wonton wrap. a place a tinny bit cream cheese & jelly. place them in the center. closed it shape like triangle 
2. the second filling a candy bar, do the same process. place it in the center of wonton wrap, then closed
3. repeat the step until all finished.
4- fry in medium pot for few minutes until brown. let it cool
5- when it cool down, sprinkle with confection sugar over the wonton 
6- eat while it is still warm because crunchy and sweet






Lamb Sandwich with melt mozzarella




Ingredients:
1 lb ground lamb
3-4 breads
1 tsp cumin
1 tsp paprika
1/2 tsp salt
1/2 tsp pepper
1 cup shredded mozarella cheese
                                         1 cup homemade tomato sauce ( or store brand )

directions:
in a medium bowl place a ground lamb and spices in. mix well with your hand. let it rest for a few minutes in the refrigerator.
meanwhile, toast the bread in the oven or stop pan for both side until little crispy. then set a side
take the ground lamb, shape a round with your hand like making a burger. grill for a few minutes for both side.then, place a cook lamb burger over the bread, sprinkle
                                       with mozarella cheese and tomato sauce
                                        grill in the oven until cheese melt. 

SUSH -w/ cooked salmon


Sushi is a Japanese food made from rice and seaweed. those are the main ingredients in making sushi. Today menu " sushi" is neither Indonesia, morocco or american food but Asian cuisine especially Japanese and Korean.
my daughter, cousin and her friend asked me to teach them how to make sushi.
 i used a cooked salmon, egg and veggies because the kids do not like eating raw seafood.
look fancy dish but they are cheap, healthy, fun to eat and most of all DELICIOUS food
you can put anything for the filling be creative to your dish as well as taste 
below i post  of my children and friends having fun in kitchen . 


amina's play date with friend and cousin making a sushi 

Ingredients:
- 3 cup cooked rice
-sushi vinegar ( if you don't have use a white vinegar )
- 1 zucchini ( cut strip )
- 1 cucumber { strip ) 
- 1 cooked egg ( cut strip )
-1 cup cooked salmon ( teriyaki flavor )
- rice season - ebi umami ( you can replace with sesame seeds )
- bamboo mat for roll the sushi

dressing: ell sauce, soy sauce, wasabi

directions:
in a bowl, place a cooked rice and sushi vinegar. mix them well so incorporate the rice.
place a seaweed in the top sushi mat. take a hand full of rice. spread around the seaweed. then put a cooked salmon in the top of seaweed fallow with zucchini, cucumber and egg.
start rolling. roll from the bottom until to the top, press gentle. cut in a bite size.

Chocolate Hazelnut Gelato



Ingredients
2 cups whole milk
4 egg yolks
1 cup heavy cream
1/2 cup sugar, plus 1/4 cup
1/2 ts vanilla extract
1/2 cup chocolate-hazelnut spread

Direction:
- in small pot combine the milk, sugar and heavy cream. cook for 3 to 4 minutes until all dissolve. 
- meanwhile, use a hand mixer or any other mixer you have, beat the egg yolks with the remaining sugar until turn forming and creamy look almost light whip cream like
- then pour 1/2 cup of the warm milk and cream mixture into the egg mixture and stir
- add the mixture back into the small pot. cook with low heat. stir constantly because we don't want to turn scramble egg. cook for 7 to 9 minutes 
-add the remaining ingredients, vanilla extract to the custard mixture. 
- chill custard mixture completely before pouring into an ice cream maker. 
- when the custard mixture is so cold, pour it into an ice cream maker with the chocolate hazelnut spread. let its work for about 20 minutes until gelato look like an ice cream.
-once it's done you can place back in the freeze for extra chill or eat right away.
-serve scoop gelato into serving cup and top with your chocolate or hazelnuts.

Banana oat Muffins




        Good morning kids, breakfast is ready " banana Muffins "
who can resist a fresh muffin, once your kids try these goodies a fresh bake believe me they will ask you more to bake because my children do. ..
use a fresh ingredients as possible so that your bake is taste delight y yummy. 

Ingredients:
21/2 cups flour
1 cup oat meal
1 tsp baking soda
1 tsp baking powder
1/2 tsp cinnamon
1 cup brown sugar
1 cup sugar
1 cup oil
1 tsp vanilla
3 eggs
2-3 bananas

directions:
1. Heat the oven to 350 degree f
2. Cut banana in small pieces and smashed with fork 
3. Place bananas in mixing a bowl together with sugar. mix in few minutes before add brown sugar, eggs, vanilla cinnamon, baking powder, baking soda, flour and oatmeal.
4. muffin pan, line up cup cake paper in each mole. pour a batter in to muffin mole until  to the top . repeat to each muffin.
5 once all finished, give a little oat meal over the top just for decoration.
6. place them in the oven, cook until brown for about 30 minutes. depending on your oven.
7. serve with a hot tea or hot milk for children while it is warm. good luck trying. 




Mix veggies- Moroccan Salad



Ingredients:
1 bunch beet
1 bag carrot
1 can white bean
1 cup cooked corn
2 tbsp cilantro ( chopped )
2 tbsp parsley ( chopped )
1/4 cup extra olive oil
salt 
pepper

Direction:
1. cook each veggies in separated a  pot.
2. clean and peel each veggies skin. beet, and carrot then cut into small slices. cook until tender. set a side
3. open a can cooked corn and a can bean. drain the liquid out and washed with cold water. set a side
4. in small bowl, prepared the dressing. pour extra olive oil, cilantro, parsley, salt and pepper. mix together until taste perfectly.
5. separated the veggies in medium a bowl. pour 1 tablespoon dressing in the veggies mix well.set a side
6. do the same to all veggies. give 1 tablespoon dressing. 
7. in a big salad plate, place a salad separated like you see in the picture. serve right a way or can be save for a couple day in the refrigerator.

klepon ( glutinous rice ball with Palm sugar )




Ingredients
2 cups glutinous rice flour
1/4 cup water
1/4 cup coconut milk
100 gm palm sugar
1 cup coconut shredded ( steamed and add pitch of salt )
Salt
1 tablespoon sugar
Green food color ( pandan paste )

Method:
- boil water in medium pot, mean while preparing Klepon ( glutinous rice ball )
- chopped palm sugar in small pieces, and set aside
- prepared  glutinous ball ( klepon),  in a medium ball, place the glutinous rice flour add water, coconut milk, salt, green color and sugar. use your hand mix all together until no more sticky on your hand.
- take a small amount of dough ( abouth 2 tablespoon ), flat it out with your hand, take a palm sugar then place it in the middle, closed it and roll in like golf ball. repeat all until finished.
- cook them in a boiling water for about 2 or 3 minutes until Klepon float to surface
- coconut shredded, steam for few minutes. add pitch of salt .
- remove the balls with splatted spoon, then place them over the coconut shredded, so all cover klepon with coconut shredded

Banana and oat muffin



Ingredients
2 1/2 cups flour
1 cup oat meal
1 tsp baking soda
1 tsp cinnamon
2 cups brown sugar
1 cup oil
3 eggs
2 bananas

Directions:
1. preheat oven to 300 degree f. line muffin tins with cup cake paper
2. in a bowl, smashed bananas with a fork.  set a side
3. blend eggs and sugar until smooth, then add oil and bananas
4. add dry ingredients, flour, oatmeal and cinnamon. mix until batter no lump
5. pour muffins batter to each muffin tins until to the top, repeat all muffin tins finished
6. place muffin in the oven, cook until brown or check with tooth pick
7. serve while warm with a hot tea in the morning.



Ziah's Doughnuts (For Doughnut Maker)


  



hi guys ..
 my kids and her cousin showed you how to making a donuts from doughnut maker. D-licious  and a simple recipe for kids party at home . 
they had so much fun doing this activity as much as i had fun watching them eating all donuts. this donut maker is our a new best friend because it bring them joys and closed to cook. 

1 cup sugar
2 tsp baking powder
2 egg
vanilla
8 tsp cooking oil
1 cup evaporate milk

frosting:
chocolate icing, vanilla frosting ( add food color ). slices almond, sprinklers 

Direction:
1. blend egg and sugar until cream
2. add flour and vanilla then mix well 
3. pour milk to batter a little by little while you use blender until no lump and smooth batter
4 heat a donut  maker and grease with cooking oil 
5. pour a donut batter to each mole, then closed. cooked until both side golden brown 
6. wait until donuts are cool, then decorated as you kids like.

Simple tagine fish mackerel



So simple, and so healthy. I hope you enjoy this recipe !!.

Ingredients:
1 fish ( I use boston mackerel )
1 carrot
1/2 lemon
1 onion
1/2 tsp cumin
1/2 tsp paprika
1/2 ginger powder
1 tablespoon parsley ( chopped )
Salt
Pepper
1/4 cup olive oil
Water

Method:
Cut fish into half and washed it, let a side. Cut carrot in 4 sizes, then slices onion like an onion ring.
Preparing sauce for tagine, combine cumin, paprika, ginger, salt, pepper and olive oil in a bowl.
Then marinated the fish with sauce for 5 minutes ( or you don't need too, but I like more flavor on the fish ). After fish has been marinated. Place slices onion ring in the tagine, the add fish over the onion. Place slices carrot any way you like. Put slices lemon for each fish. Pour remain the sauce over the fish and add a little water about 1/4 cut. Place the tagine ( clay dish ) on the stop, cover and cook for 10 minutes in low heat, time after time check the fish and use a spoon pour some sauce from the tagine over the fish and carrot. Let a cook until sauce almost disappear .

Funnel Cake


Funnel cake is one of sweet treat find in any carnival or street festival any where in United States every summer. now you dont need to wait until summer to come.you can make this sweat treat all year a long at home with few ingredients with quick, easy and cheap making. 
our experienced eating this funnel cake in NYC. I took my children to this carnival in NYC where rides, street foods and board walk by the beach. eating funnel cake still warm, sugary fluffy cake. my kids ask for more...and more. 
sweet, crunchy fluffy dough with a vanilla aroma & just fun foods to share. since then we eat when friends come or fun day at home.



Ingredients:

1. 1 1/4 Cup Flour

2. 1/4 Cup Sugar
3. 1 Tsp Baking Powder
4. 1/2 Tsp salt
5. 1 Tsp Vanilla Sugar
6. 1 egg
7. 1 Cup Milk
8. Oil to fry

Decorations:
- Confection sugar
- Vanilla sugar



Directions:

   In a medium bowl, beat eggs, sugar, water and milk slowly then add flour, baking powder, 
and salt. let all components  mix  and no lump. Pour cake batter in to Funnel. If you do not 
have a Funnel, used a Ziploc bag, cut one of the corner.  
Heat oil with frying pan. bring funnel batter closely to oil, start pour the batter by moving in 
circulation motion to created spiral shapes. cook both side until golden brown. repeated the 
step until batter finished. let them cool for few minutes, top with confection sugar or vanilla 
sugar.

Asinan mangga ( spicy manggo pickle )


Ingredients

2 manggo ( best used a hard manggo )
3 tablespoon sugar
4 tsp white vinegar
6 small red chillies
1 large red chili
2 tsp salt
4 cup water



Method:
- place the water, salt, vinegar, sugar in a pot, cook until boil and set a side until cool down
- blend chillies ( chopped very fine ) and set a side
- cut and slices mango thinly so quick marinated
- in container or jar, pour cooked water, chopped chillies and slices mango.
- place the mango pickle in the freeze for overnight

Yellow split Peas Soup




Ingredient:
* 1 1/2 cup dried yellow split peas
* 3 small bowl of water or chicken stock
* 1 medium onion, chopped
* 4 gloves garlic, chopped
* salt
* pepper
* 1/2 cup home made tomato sauce or tomato paste
* 2 tsp curry powder
* oil

Method:

- rinse peas in warm water, set a side
- pre-heat stove. in a medium pot, pour oil, chopped onion and garlic. saute them until aromatic for about 1 or 2 minites. then add curry powder to the onion. stir quickly don't let it burn.
- add dried peas, water or chicken stock, salt, pepper, and tomato sauce to the onion pot.
- cover and simmer in low heat until peas are tender.
- add more water if neccessary. Top with grill bread, croutons or pita bread, if desired.
- enjoy while warm.

Almond Cake



most easy and super delicious cake i found a new recipe " Almond cake ". it is full of nutty flavor.  so yummy enjoy with hot tea or coffee. my friends and family never get enough eating this cake.

I have made it many times  for my friends and family. i decided to share at my food blogger for all of you to try.

Ingredients:


110 gm butter

120 gm sugar
3 large eggs
90 gm ground almond
40 gm flour
1 tsp baking powder
1 tablespoon milk
1 tsp vanilla sugar 


*** you need for garnish: slices almond and confection sugar***

Method:

  1.  Pre-head oven to 200 - 225 degree. 
  2.  Place  eggs, butter, sugar in a medium bowl. then beat with electricity mixer until fluffy and light airy.  add ground almond, flour, baking powder and sugar, then mix again for a couple minutes until all ingredients well combined. 
  3. Baking pan, grease all around the pan and dust with little flour. then pour the almond cake batter over the baking pan. spread cake batter evenly. sprinkle with slices almond over the top.
  4. Bake for 30 to 40 minutes until cooked and brown over the top. to double check use a tooth pick, place it in the middle of cake. if it's wet continue to cook again for few minutes.
  5. Once the cake cooked, removed from baking pan and place in baking rack for 5 minutes. dusting with confection sugar 
  6. cut the cake as your desire and serve with tea or coffee.

Pisang Molen ( Banana wrapped in flour dough )



                LOVE the flaky and buttery taste this banana fritter. enjoy with some hot tea or coffee in the morning or afternoon relaxing... second time made this recipe so far so good no regret its work with my mouth. I used 4 medium plantains enough for every one and more left over for next day breakfast me and my husband.  good luck trying :)

Ingredients:

* 4 banana ( sweet & soft plantains )
* 200 gr all purpose flour
* 80 gr butter
* 4 tablespoon sugar
* 1/2 tsp salt
* 100 ml cold water
* 40 gr  maizena
