Nasi goreng ayam ( chicken fried rice )



 Ingredients:

* 3 cup cooked rice
* 1 1/2 cup fry shredded chicken
* 2 gloves garlic - grated
* 1/2 tsp salt
* 2 eggs
* 2 long chilli - green & red ( any chilli you have is fine ) - cut & slices
* 1 1/2 tablespoon soy sauce
* 2 tablespoon sweet soy sauce
* Belacan ( shrimp paste ) - if you can't find it's okey just cook w/out it
* 4 tablespoon oil

Garnish:
* 1 cucumber
* 1 tomato
* 1 egg
* fried onion
* fish cracker


Method:
* fry the chicken then shredded - let aside
* use 1 egg , make scramble for rice - let aside ( another 1 egg for garnish )
* in cooking pan ( wok ) - heat oil , add grated garlic, chilli for 2-3 minutes
* add cooked rice, salt, soy sauce, sweet soy sauce, belacan, shredded chicken & scramble egg
* stir the rice until mix together for 5 minutes
* fry 1 egg for garnish and slice ( look picture above )
* to serve : place the fried rice on plate and garnish w/ slice cucumber, tomato, sprinkle fried onion & fried egg , fish cracker

Kolak tapioca w/ kacang ( tapioca & bean w/ coconut milk )


Ingredients:

* 100 gr dried tapioca - ( any dried tapioca is fine )
* 1 can coconut milk
* 1 cup water
* 1 can red bean - wash the liquid out
* pitch salt
* 1/4 cup sugar

Method:

- cook tapioca at pressure cooker about 5-10 minutes ( or any cooking pot is fine )
- when tapioca become tender , drain the liquid out
- cook coconut milk in the pot , add water, salt & sugar until boiling
- how to serve:  put tapioca & bean in bowl and pour the coconut syrup , can be serve cold or hot

Fruit popsicle


Ingredients:

* 1 cup blueberries/ or blackberries
* 1 cup strawberries
* 1 cup juice ( any kind juice )
* 4-5 ice cubes

Method:
- used blender - blend all ingredient until mix together & smooth
- pour the  mix fruit at the popsicle mole and keep it at freezer for over night

Moroccan chicken stuffed w/ livers & vermicelli

Ingredients:

cook for chicken                                      Filling
* 1 whole chicken                                    * l 1/2 bowl cooked chinese vermicelli
* 1 tsp salt                                               * 1 container chicken liver                                   
* 1 onion - grated                                     * 1/4 tsp pepper
* 4 gloves garlic                                       * 1/2 tsp salt
* 1 tsp ginger powder                               * 2 tsp olive oil
* 1/2 turmeric                                           * 1 tablespoon parsley
* 1/4 tsp pepper                                       * 1 tablespoon cilantro
* 1/4 olive oil                                           * 1 glove garlic
* 1 bowl water ( or more )
       Garnish
       * 1/2 lb red olive
       * 1-2 preserved lemon ( see my recipe for making preserved lemon ) 
Method:
Filling
* cook vermircelli w/ hot water & let cook for few minutes, strain and cut
* add chicken liver, chopped parsley, cilantro  &. mix them in bowl add pepper, salt, olive oil mix well until  all spice together
* Wash chicken w/ salt and lemon ( to avoid smell ), stuff with vermicelli mixture in side the chicken
* use chicken w/ kitchen tread 
* place chicken in pressure cooker or wide pot  with oil oil, salt, chopped garlic, ginger powder, pepper,  turmeric, & water 
* closed pressure cooker, then cook chicken until tender for both side to have more flavor about 1 hour
* 15 minutes before cooking, put olive  & preserved lemon 
ingredient you need
mix ingredients: grated onion, garlic,
ginger powder, pepper, turmeric, salt, olive oil

filling mixture for stuffing

fill the chicken w/ mixture mix
closed chicken w/ kitchen tread


   place stuffed chicken in pressure cooker
     or wide pot. cook until tender for 
                 both side.

Fish taco twist w/ Moroccan salad


( 2 Person )
Ingredients:

* 4 flour tortilla
* 2 fish fillet - any white: Cod, Cat fish, tilapia, flounder or salmon ( I used frozen fish )
* 1/2 cup flour
* 1/4 tsp salt,
* 1/4 tsp paprika
* 1/4 tsp cumin
* 1/4 tsp pepper
* 1 egg - for wash

White Sauce:
* 1 tablespoon mayonese
* 1 tsp hot sauce
* 1/4 tsp lemon juice
* 1/2 tsp plain yogurt
* 1/4 tsp salt

Garnish
* Moroccan salad- mix w/ cucumber, red pepper, tomato, little parsley, cilantro

Beef Taco Moroccan Twist


Ingredients:

* 1 lb ground beef
* 1/2 tsp ginger powder
* 1 tablespoon onion powder
* 1/4 tsp Cayenne pepper
* 1/4 paprika
* 1 tsp salt
* 1/2 tsp cumin
* pitch saffron
* 1/2 tsp pepper
* 3 tablespoon olive oil
* 12 pcs ready shells taco

garnish:

* purple cabbage - shredded
* 1 tomato - diced
* cilantro - chopped

Method:
* cook the ground beef w/ olive oil until brown . add garlic powder, onion powder, ginger powder,paprika, Cayenne, salt, cumin, saffron, pepper,for 3-4 minutes until get together
* heat the taco shells in the oven for few minutes
* take a taco shell refill w/ group beef + shredded purple cabbage + dice tomato & chopped cilantro

Moroccan Salad


Ingredients:

* 1/2 red pepper
* 1/2 cucumber
* 1 tomato
* 1/2 tsp cilantro
* 1/2 tsp parsley
* 1/4 tsp white pepper
* 1/2 tsp salt
* 2 tablespoon olive oil
* 1/2 small onion
* 1 tsp vinegar

Method:

* Wash all vegetables & herb
* cut the veggies & herb small pieces
* mix all ingredients in salad bowl , marinated for few minutes before served
* you can use any salad dressing up to your taste

Moroccan Lamb shank



Ingredients:

* 2 legs lamb shank
* 1 big onion
* 3 garlic
* 1 tsp paprika
* 1/2 tsp cumin
* 1 tsp ginger powder
* 2 cardamon
* 2 bowl water
* 1 tsp salt
* 1/2 tsp pepper
* 1/4 cup olive oil

Method:

* Brown lamb shank in pressure cooker or dutch oven ( slow cook ) pan for both side and take it out
* mean while chopped onion, garlic, 
* then transfer onion & garlic to pressure cooker or pan cook w/ olive oil for 1-2 minutes
* Trow the lamb shank to pan , add paprika, cumin, ginger powder, cardamon, pepper, salt and water
* cook until sauce thicker and tender

Soup daging sapi


Ingredients:

* 1 lb beef w/ bone
* 1/2 onion - grated
* 2 gloves garlic - grated
* 1 tsp salt ( up to your taste )
* 1/2 tsp pepper
* 1 cm ginger -  cut thin size
* 2 stick celery - cut in bite size
* 2 potato - cut in 4-6 size
* 2-1/2  bowl water
* 3 tsp oil

Method:
* boil the beef until very tender , then cut in bite size ( up to your taste )
* mean while , heat the sauce pan w/ oil , drop the grated onion & garlic until caramelized 
* pour the caramelize onion & garlic to the boiling water w/beef, add salt, pepper, cut celery, & potato
* cook until taste about another 20 minutes

Berries & oatmeal smoothie

( 2 people )

Ingredients:

* 1 cup blueberries/ or blackberries
* 1 cup strawberries
* 1 pack quaker instant oatmeal ( I used apples & cinnamon )
* 4-5 ice cubes

Method:
- used blender - blend all ingredient until mix together & smooth
- garnish w/ fresh strawberries

Lempah kuning iga ( turmeric & spicy soup beef rib )





Ingredients:

* 3 lb beef bone or rib
* 2 cm galanga
* 4 big chilli
* 2 gloves garlic
* 1 table spoon turmeric
* 1/2 onion
* 1 table chili powder
*  2 tsp salt
*  1 1/2 table spoon tamarin 
*  1/4 penyedap rasa ( option )
* 4 bowl water ( or more )

Method:

- cook meat/rib in the pressure cooker or pot until tender
- took mean out and cut small pieces - don't trow bones
- blend galanga, garlic, onion, & chilli until mix together 
- pour the spice in boiling water used a big pot , add tamarin, turmeric, chili powder, salt, penyedap rasa ( msg ) for 20 minutes
- serve w/ jasmin rice

Tang drink refresh w/ lemon

tang drink: easy & entertain for kids party
Ingredients:

* 5 table spoon tang mix
* 2 fresh lemon  
* Ice cubes
* water

Method:
* mix tang powder into the pitcher & add water until full
* cut lemon for juice 
* serve w/ ice cubes & decorate slice lemon


Squid w/ Black bean sauce & green chili


Ingredients:

* 1 lb squid 
* 1 cm ginger root - slices
* 4 tsp black bean sauce
* 2 tsp sugar
* 4 long green chilli - thick slices 
* 1/2 tsp pepper
* 1/4 tsp salt 
* oil for frying

Method:
* fry the squid until brown then let aside
* mean while , in cooking pan fry w/ oil the ginger, black bean, green chilli, sugar, pepper, salt for few minutes
* drop fry squid to the sauce pan, then cook for another 20 minutes

Moroccan chicken w/ potato

Ingredients:

* 1 Chicken
* 2 big onion - grated
* 3 gloves garlic - grated
* 2-3 potato - cut 4 size
* 1 tsp cilantro - chopped 
* 1 tsp parsley - chopped
* ½ tsp pepper
* ½ tsp tumaric
* 1 tsp ginger powder
*1 preserved lemon
* ¼ cup olive oil
* 1 bowl water

Method:

* Wash chicken w/ salt & fresh lemon and strain
* in pan , mix chopped onion, garlic, cilantro, parsley, pepper, tumaric, ginger powder, inside lemon ( not skin- leave skin for later ), olive oil & water
* cook for 1 hr , check chicken and stir for both side every 10-20 minutes
* after 40 minutes put lemon skin & potato, then cook another 10 minutes
* Remove chicken and bake in oven until golden brown
* then put chicken back to sauce pan & keep cooking until sauce thicker

Bakso sapi ( indonesian beef ball )

bakso sapi ibu ziah


Ingredients:

* 1 lb ground beef
* 2/3 cup tapioca starch
* 1 1/2 tsp baking powder
* 3 glove fresh garlic - grated
* 1/4 tsp white pepper
* 1 tsp salt
* 1 egg white
* 3 ice cubes


Instructions: 
* use a food processor grind the ground beef mix w/tapioca, baking powder, garlic, pepper,salt, egg white and ice cubes for 3-4 minutes until the beef sticky.
* boil some water in a big pot 
* make a small ball w/ spoon then drop the beef ball in the pot, when its float , that's cook


For Soup


* 1 lb beef w/ bone
* 1 big onion - cut in half 
* 4 crack fresh garlic
* 1 chicken stock cube
* 2 tsp salt ( up to your taste )
* 1 tsp white pepper ( up to your taste )
* 2 stick celery
* 2 star anise
* 3 tsp oil
* 4-5 bowl of water ( depend how much liquid you like )


directions:
- use a soup pot, saute the onion and garlic until brown for both side
- drop beef, stock cube, salt, pepper, celery, and anise in the pot w/ bowl water then cook until very tender for about 1 hrs, cut the extra meat in small pieces
- when the soup is done , now you can drop beef ball in the pot and cook another few minutes 
- serve w/ green vegetables &  noodle















fish kebab w/ zucchini

Fish kebab from moroccan flavor



Ingredients:

* 1 lb fish fillet ( any fillet )
* 1 zucchini
* 1/4 tsp cumin
* 1/4 tsp ginger powder
* 1/4 tsp paprika
* 1/2 tsp salt
* 1/4 tsp cilantro
* 1/4 tsp parsley
* 1 tsp olive oil
*  few bambo stick

Method:
- mix all ingredients w/fish in the bowl 
- let marinated for 1-2 hrs 
- grill until both side brown


Morracan Bread " Khobz"


Ingredients:                                                                

* 1 tsp yeast
* 3 cup flours
* 1 cup semolina
* 2 tsp salt
* 2 tsp sugar
* 2 tsp oil
* 1 3/4 cup water
* additional semolina/flour for dusting if it's sticky
                                
Instructions:
   - mix flour, semolina, salt, oil, water & yeast in the bowl
   - if you use an electricity mixer, mix the dough for 10-15 minutes ( if not knead the dough w/ your
     hand for 20 minutes until elastic and rise a bit
   - once you done kneading the dough / or mix at electricity mixer transfer to bowl, cover w/ fabric or         
     small towel for 1 hr until double the size.
   - prepare 2 baking sheet and dust w/ semolina let it aside for few minutes
   - make 4 small balls from the dough, then flat it out ( look pictures below for shape )           
   - once you done flat the dough, transfer the bread to fabric/ small tower to avoid not sticking
   - it takes 45 minutes to get the dough rise again , then bake them w/ baking sheet until golden
     brown




let dough rest for 1 hrs
cover w/ fabric in order to
double its size
after few hours ready to bake

Cream zucchini soup

zucchini soup w/ extra
sprinkle parmesan


Ingredients:

* 3 large zucchini 
* 1 medium onion - chopped
* 3 gloves garlic - chopped
* 1/2 tsp pepper
* 1 1/2 tsp salt
* 1/2 cup cream
* 1 bowl water
* 3 tsp parmesan cheese
* 3 tsp olive oil

Method:
* cut zucchini into small pieces
* chopped onion & garlic, then saute in the pan until caramelize w/ oil
* add zucchini, garlic pepper, salt & water let cook for 20 minutes
* when zucchini is tender/ soften
* put zuuchini in the blender , puree for soup 
* then put it back again in the pot , keep cooking for 5-10 minutes
* add cream, and parmesan cheese in the soup 
* serve w/ extra cheese & olive oil 

Nasi uduk ( coconut rice w/ lemon grass flavor )




Ingredients:
* 2 cups jasmine rice
* 4 cup coconut milk
* 1 lemongrass
* 2 bay leaves
* 1 tablespoon salt

Garnish
* telor belado - spicy egg
* sambal tempe 
* ayam goreng
* rempeyek

Instructions:
* Wash rice in a cold water, and drain
* mix the rice, coconut milk, lemongrass, bay leaves and salt in a pot, cook in medium heat. stir until rice soak all the liquid
* Transfer the rice in steamer. steam the rice until soft and tender
* serve with egg, sambal rempe, ayam goreng, rempeyek

Sweet roast quail


Ingredients:

* 3 fresh quails
* 4 tsp sweet soy sauce ( if you don’t have , substituted w/palm sugar &
    Soy sauce)
* 2 tsp coriander seeds
* ½ tsp salt
* ¼ pepper
* 1 glove grated garlic
* 1 grated shallot
* 2 tsp coconut milk
* 2 tsp canola oil

Instructions:
- mix quails in the bowl w/ sweet soy sauce, coriander seeds, salt, pepper, garlic, shallot, coconut milk for 1-3 hrs
- heat the oven to 400 f , bake the marinated quails for 1 hrs
- check every 15 minutes & brush the bird from extra sauce and oil.

Spicy bake chicken Heart & Liver



Ingredients:

* 1/2 lb chicken liver
* 1/2 lb chicken heart
* 3 tsp sambal olek ( you can find it at asian market )
* 1 tsp honey ( or sugar )
* 1/4 tsp pepper
* 1/4 tsp salt
* 3 tsp olive oil ( or canola oil )

Method:
- boil chicken liver & heart with salt for 20 minutes
- turn on oven 425 f , then place the cook chicken liver & heart at baking sheet with oil , bake for 15 - 20 minutes 
- add sambal olek, pepper, honey, and salt then bake another 10 minutes

Mint & Oreo Milk shake

sweet & bitter taste


Ingredients:

* 1 cup cold non sweet strong coffee
* 4 big tablespoon mint ice cream
* 3 oreo cookies

Direction:
- brew coffee and leave it cold in the freeze for few hours
- mean time,  smash oreo cookies w/ any heavy kitchen object
- step 1:  pour cold coffee at your cup + add scoops ice cream + then trow smash cookies 
     serve ....delicious , easy & satisfaction dessert

Zucchini Frittata ( veggies omelette )


Ingredients:
* 4 medium eggs
* 4 very small cook potato : I used purple and yellow potato ( or any 1 big potato is fine ) - chopped small
* 1/4 cup heavy cream
* 2 tsp Italian parsley - chopped
* 1/4 tsp pepper
* 1/2 tsp salt
* 1 big tablespoon Parmesan cheese
* 1 cup chopped zucchini ( half zucchini )
* 2 tsp olive oil

Method:
1> chopped very small zucchini & cook it w/ olive oil until tender in non-stick pan
2> meantime beat eggs in the bowl and mix all ingredient: cream, chopped potato, parsley, pepper, salt, cheese, zucchini
3> now add beating eggs in the cooking zucchini, stir until mix together
4> keep the heat on medium because easy to burn
5> when omellete become golden brown turn frittata w/ flat plate then cook another 2-4 minutes .
6> then take it out and done

Custard Pie

 ( a bit over broil top....still delicious :) )
Ingredients:
* 1 short bread- ready crust
* 3 eggs
* 1/3 cup condensed milk
* 1 1/2 cup whole milk
* a pinch freshly grated nutmed


Method:
1. the filling: in a big bowl whisk egg, condensed milk,  whole milk, nutmeg together 
2. pour the filling into the pie crust 
3. bake pie in the oven at 375 f for 30 minutes and cool or freeze before serve

shortbread pie
whisk all ingredient all together
then pour to pie crust 

Fresh tilapia w/ thyme sauce


cook fish w/ thyme & olive oil
Ingredients:
* 2 whole fresh tilapia - ( no frozen fish )
* 2 tsp olive oil
* 2 tsp butter 
* 6 sticks thyme
* 1 cup heavy cream
* 1/4 tsp pepper 
* 1/2 tsp salt
* 1/2 tsp chopped thyme
* 2 garlic glove - chopped small
* hand full green beans - boil until tender 

Instructions: 

1. fillet fish for both side , wash & sprinkle w/ salt, pepper
2. heat cooking pan w/ olive oil & stick of thyme then fry fish both side until crispy & brown
3. take fish & thyme out and let aside
4. using same pan, drop chop garlic, butter,  pepper, salt and chopped thyme for 1-2 minutes
5. pour cream over the pan cooking for 3 minutes 
6. place cream in the plate + place cooked green bean + then fish - garnish w/ cook thyme

Garlic bread parmesan



Ingredients:
* 1 Italian bread ( any long bread is fine )
* 4 tsp soft butter
* 1 head whole garlic - cover w/ aluminium foil & roasted in the open stove - smash w/ knife
* 2 tsp parmesan cheese



spread butter on the bread for both side,
sprinkle w/ parmesan cheese, & roasted garlic

bake in the oven for 5 minutes or more
