zucchini soup w/ extra
sprinkle parmesan
Ingredients:
* 3 large zucchini * 1 medium onion - chopped * 3 gloves garlic - chopped * 1/2 tsp pepper * 1 1/2 tsp salt * 1/2 cup cream * 1 bowl water * 3 tsp parmesan cheese * 3 tsp olive oil
Method: * cut zucchini into small pieces * chopped onion & garlic, then saute in the pan until caramelize w/ oil * add zucchini, garlic pepper, salt & water let cook for 20 minutes * when zucchini is tender/ soften * put zuuchini in the blender , puree for soup * then put it back again in the pot , keep cooking for 5-10 minutes * add cream, and parmesan cheese in the soup * serve w/ extra cheese & olive oil
