Zucchini Frittata ( veggies omelette )


Ingredients:
* 4 medium eggs
* 4 very small cook potato : I used purple and yellow potato ( or any 1 big potato is fine ) - chopped small
* 1/4 cup heavy cream
* 2 tsp Italian parsley - chopped
* 1/4 tsp pepper
* 1/2 tsp salt
* 1 big tablespoon Parmesan cheese
* 1 cup chopped zucchini ( half zucchini )
* 2 tsp olive oil

Method:
1> chopped very small zucchini & cook it w/ olive oil until tender in non-stick pan
2> meantime beat eggs in the bowl and mix all ingredient: cream, chopped potato, parsley, pepper, salt, cheese, zucchini
3> now add beating eggs in the cooking zucchini, stir until mix together
4> keep the heat on medium because easy to burn
5> when omellete become golden brown turn frittata w/ flat plate then cook another 2-4 minutes .
6> then take it out and done

saute chopped zucchini

pour beating eggs to saute zucchini pan
mix ingredient 


turn frittata to othersize &
cook another 2-5 minutes
