Shish Kebab beef heart

( 4 people )
Ingredients:
- 1/2 lb beef heart 
- 1/2 tsp cumin
- 1/2 tsp paprika
- 1 tsp salt
- 1/2 tsp pepper
- pitch saffron
- olive oil
- skewers

Methods:
- Cut the beef heart into a bite size
- place in bowl and mix cumin, paprika, salt, pepper, saffron and olive oil
- let marinated 3-4 hours or over night
- once the beef marinated, place 5- 6 pieces in skewer 
- Heat the indoor grill and grease with olive oil, place the kebabs in grill. cook a both side until grill marks abut 20-30 minutes

ziah steak


Ingredients:
* 1 - 2 lb boneless rib steak
* 5 tablespoon steak sauce
* 2 tablespoon coriander
* 1 tsp pepper
* 1 tsp salt
* 2 tsp olive oil

Methods:
- Mix all in ingredients and steaks in a wide bowl or plate
- rub stake sauce all over the meat and let marinate for 20-30 minutes
- Heat the indoor grill with low heat, grease the grill with olive oil 
- Place the steak on the grill, then let cook until grill marks for both side
- put extra steak sauce about 1 tablespoon each side for extra flavor
- cook until steak brown and grills about 30 minutes
- let the meat rest for 5 minutes before serve 

Moroccan sausage with pita bread



cut sausage into 3 pieces

 if you don't find moroccan sausages... substitute with any ground beef or lamb but add extra cumin & paprika  in the meat...

Ingredients:
* 1/2 lb Moroccan beef sausage
* 1 cup green pepper
* 1/2 tsp salt
* 1/4 tsp cumin
* 1/4 tsp pepper
* 3-4 tablespoon olive oil
* 1 cup water
* 2 pita bread

Sauce:
- 1 tablespoon plain yogurt
- 1 tablespoon mayonnaise
- salt
- pepper
- cumin
- Pepper

Methods:
- Boil sausages  in a pan with 1 cup water until liquid reduce almost entry. take sausage out and let a side
- add 3-4 tablespoon olive oil in the same pan, then add slices green pepper, salt, pepper and cumin until pepper becomes very soft
- then add the cook sausage, stir with tong until spice, green pepper and sausage mix together
- take one pita bread, heat in stove with open fire until the bread little toast and soft
- place the sausage & pepper in the pita bread, then pour a couple spoon white sauce over the sandwich. fold in half and serve

Deluxe Pizza with cauliflower & hot green pepper


Ingredients:
* Homemade pizza dough - look for my recipe
* Homemade tomato sauce - look for my recipe 
* long green hot pepper - slices
* red pepper
* cauliflower
* Black Olive
* shredded mozarella cheese


Method:
- take a pizza dough and  place it in baking sheet with olive oil
- flatten the dough into circle using a wood rolling or your hand until thin crust.  if you are like very thinly crust use a fork to make holes all over the dough. the dough can be too sticky, use extra flour for dusting but not too much.
- take 4- 5 tablespoons homemade tomato sauce and spread sauce over the pizza 
- put a half pizza with green hot pepper 
- other a half pizza with red pepper, cauliflower, and black olive
- sprinkle with mozzarella cheese and extra olive oil 
- bake in the oven 350f until crust and topping cook about 30-45 minutes

Putri mandi


Ingredients:

A: coconut filling 
   - 2 cup shredded coconut
   - 150 gr plum sugar
   - 1/4 tsp salt
B: skin 
 - 3cups glutinous rice flour 
 - 2 tsp tapioca 
 - 2 1/2 tablespoon sugar
 - 300 ml water or less
C:Sauce
 - 300 ml coconut milk
 - 3 tablespoon sugar
 - 3 tsp rice flour
 - 2 tsp tapioca
 - pitch of salt

Instructions:
A: - combine all ingredients A in pan,
    - let the plum sugar and coconut mix together until turning brown about 5-6 minutes. let a side until it cool
B: - Combine all ingredients B in bowl. 
    - mix and work the dough with your hand 
      shape dough in small ball and fill inside with Ingredient A
    - Boil some water in small pot, and drop few balls at a time from Ingredients B in the boiling water. 
      when the balls float take them out. it done
C: Mix ingredients C in bowl until no lump, then transfer to cooking pan.
    - let cook in small heat and keep stir sauce until becomes thick turning color little brown
    - take some few balls in a plate and pour sauce over the coconut ball. 
   - can be serve cold or hot

   





Crostini tomato & caramelized onion

My quick fix "snack" for kids, husband and I tonight...yummm for me !!
after hours taking care
my 6 yrs son with school work and our new born baby,...I was hungry for snack and  need something to feed the kids before their bed time....
a left over bread in the freeze from a couple day ago, tomato, onion and cheese..why not?? " crostini " it took me less than a half hour to make crostini.
It turned out my husband loves it and me too.....well..I am not a bread person but him does. this's one of my favorite  appetizer i said from now.....
 


Ingredients:
* 1 long & thick French bread
* 1 a big onion
* 1small-medium tomato
* 3 tablespoon Parmesan cheese
* olive oil
* salt 
* pepper

Instructions:
 Step 1:  caramelized onion
      - cut slices onion and saute the onion in the pan with olive oil, salt & pepper until 
       union turning brown and soft

Step 2: dice the tomato and mix in small bowl with dust salt, and olive oil

Step 3: cut French bread to thin slices 
          - Heat the grill or oven , place the slices bread into the grill or sheet pan  cook in the oven, and brush 
            the bread with olive oil for both side, let it cooks until grill mark or brown for both side

Step 4: Once crostini done, place some dice tomato over the toast bread and some caramelize onion with 
          sprinkle of Parmesan cheese on the crostini

Martabak ayam


Ingredients:
* 1 lb ground chicken
* 4 gloves garlic
* 1 small onion
* 1 tsp salt
* 1/2 tsp pepper
* 1/2 tsp chicken bouillon (option)
* 12 eggs
* 10 scallion
* 25 egg rolls wrap
* fresh green chillies ( option )

Instructions:

  Step 1 - Blend onion & garlic in food processor until smooth.
            - Heat cooking pan with some oil and saute the onion & garlic paste          
              for 2-3 minutes
            - add the ground chicken, salt, pepper, & chicken bouillon cook for 
              another 5-6 minutes
            - Meantime chopped scallion very thin and mix together with beat 
              eggs

  Step 2 - take one sheet of egg roll wrap, put 1 tablespoon from "step 1" in 
              the middle
            - Brush egg roll wrap with little water all around, then start to fold 
              both side + down + up, exactly look a square shape
            - use around or wide flat pan, heat pan with enough oil
            - cook 2 or 3 martabak at a time until both side golden brown
            - eat with fresh green chilli or your favorite sauce

Batter fried fish


*** 3 people ***

Ingredients:
* 3-4 fillet fishs ( flounder, tilapia, any white fish fillet )
* 1 cup flour
* 2 tsp maizena
* 1/4 tsp paprika
* 1/2 tsp pepper
* 1 tsp salt
* 2 large eggs

Method:
- Marinate fish with salt and pepper for 10-20 minutes. and after marinates let fish dry with paper towel before dipping the batter
- Mix the ingredients, flour, maizena, paprika, pepper, and salt and let aside
- Beat 2 large eggs in plate or wide bowl and let aside
- take fish fillet one a time dip it with flour mixture, + and dip to egg bitter,  then dip again to flour mixture
- Heat oil in frying pan with enough oil, then drop few batter fish to the oil when oil start sizzling. 
- fry the batter fish until both side golden brown 
- Eat with mayonnaise or your favorite sauce

ZFC ( fried chicken )


Ingredients:
* 2 lb thighs and legs
* 1 tsp garlic powder
* 1 tsp salt
* 1/2 tsp pepper
* 1/4 tsp paprika
* 3 eggs
* 1 1/2 cup flour
* oil

Method:
- wash chicken with cold water for moise meat 
- in big bowl combine chicken thighs and legs with garlic powder, salt, pepper let them marinate in refrigerator  for 3-4 hours or over night 
- in another bowl mix flour, salt, pepper, paprika. dredge the pieces in the flour mixture a few a time
- Beat eggs and dip chicken to the egg beater until combine and back again to flour mixture dip to the flour again for last.
- Heat oil in medium, use deep fryer and enough oil. test oil with little flour to the oil when it gets hot drop some pieces few a time until golden brown 
- repeat frying until done....make sure the oil not too hot otherwise chicken will not cook inside but burn outside.

Moroccan Bake fish with peppers


 ** 2 people **

Ingredients:
* 1 fish ( 1 lb -2lb ) ( trout, red snapper, big white fish, or red mullet )
* 1/2 red pepper
* 1/2 green pepper
* 1 tsp salt
* 1/4 tsp cumin
* 1/4 tsp paprika
* 1/4 tsp ginger powder
* 1/2 tsp pepper
* 1/4 cup olive oil

Methods:
- clean fish well and cut the back from bottom to up almost butterfly but leave the bone still
- slices long strip peppers  and mix in the bowl
- together combine salt, cumin, paprika, ginger powder, pepper and olive oil
- place fish in baking sheet and aluminium foil.
- stuffed fish with mix peppers
- pour left over sauce to the fish and cover with aluminium foil
- bake in the oven for 30 minutes or more depend on your oven
- serve with bread

Tumis kembang kol & udang


Ingredients:
* 1/2 lb shrimps
* 600 gr cauliflower
* 3 gloves garlic
* 1 shallot
* 1 tsp salt
* 1/4 tsp white pepper
* 1 glass water
* 1/2 chicken bouillon
* oil

Methods:
- wash cauliflower and cut pieces for bite size
- clean shrimp with cold water and remove the skin off and devein 
- slices some garlic & shallot very thinly
- Heat the pan with cooking oil , drop slices garlic & shallot to the pan. stir  for 2 minutes 
- add chicken bouillon, cauliflower, salt, pepper, shrimp and water
- keep stirring until cauliflower and shrimp well cook for about 5-6 minutes
- serve with plain rice 


Flat bread pizza with shrimp and pepper

Ingredients:
* 1 Greek flat bread
* 1 tablespoons homemade tomato sauce - look for my recipe
* slices some green & red pepper
* slices some onion
* 3 shrimps
* shredded mozzarella cheeses

Methods:
- Preheat your oven for 350f.
- Take 1 flat bread , place it in the baking sheet.
- spread homemade tomato sauce to the bread
- add slices green pepper, red pepper and onion
- add few some shrimps to pizza and sprinkle with mozzarella cheese
- put the pizza in heating oven for at least 15-20 minutes until vegetables & shrimps cook

Telur & kentang Belado ( egg & potato w/ chilli sauce )

Ingredients:
* 8 - 10 small eggs
* 3-4 long red chilli
* 3 medium potato
* 1 1/2 tsp salt
* 1/2 tsp pepper
* 1/2 tsp sugar
* 4-5 kaffir lime leaves
* oil
chilli, onion, kaffir lime leaves, salt, pepper

fry boiling eggs, fry potatoes

Instructions:
- Boiling some water with the eggs until egg very cook well. then remove the shells from the eggs.
- Meanwhile, clean potatoes and remove the skin off, cut pieces
- In food processor, blend long chilli & onion until soft
- Heat the pan with some oil, then start fry chilli paste with onion for 2-3minutes
- add kaffir lime leaves, sugar, salt & potato for another 2 -3 minutes
- then add eggs & potatoes to the sauce, stir well until spices mix together

Pizza mix toppings


Ingredients: 
 Topping:
* Pizza dough -  look under pizza for recipe
* tomato sauce - look under pizza for homemade sauce
* 4 quail eggs
* corned beef 
* black olive
* shredded mozarella cheese
* olive oil

Pizza dough:
A: 1 tablespoon yeast
     1 1/4 cup warm water
     1 tsp salt
     1 cup flour

B: 3 cup flour
    3/4 cup cold water
    3 tablespoon salt


Method:
- Mix ingredients A very things in bowl, and let rest for 20 minutes until yeast gets little bubble
- after A rest for at least 20 minutes then combine all ingredients B.
- try work with your hand until no lump in flour, the dough is little wet and sticky but it's ok.
- Let the dough rest for 2-3 hours, cover with wet fabric and store in warm room 
- after 2-3 hours dough rest, use your hand hit the dough to get air out 
- then let rest for another 1 hour
- now ready to make pizza ,,,,use your favorite pizza sauce and topping

Homemade tomato sauce:
* 4 plum tomatoes
* 3 gloves garlic
* 1/2 onion
* 1/4 tsp oregano
* 2 bay leaves
*1 tsp salt
* 1/2 tsp pepper
* 1/4 tsp sugar


Instructions:
* Boil a pot of water 
* the poach 4 tomatoes in the boiling water for 5 minutes until the skin of tomato almost peeling out
* remove the tomato skin and puree in food processor
* meant time chopped onion and garlic
* heat cooking pan with olive oil + add puree tomato, oregano, salt, pepper, bay leaves and sugar. let it cooks at least 30 minutes until sauce become very thick


Instructions:
- Heat oven to 350 f - 400 f
- mean time, get pizza dough in room temperature and flat the dough with your hand over and over until your desire crust. for thin crust, use fork all over the pizza dough 
- brush pizza dough with olive oil 
- add 4-5 tablespoon home made tomato sauce, spread the sauce all around the pizza dough
- sprinkle with lots of shredded mozarella cheese
- put the toping over the cheese , and bake in the oven about 20-30 minutes until you see brown in pizza crust and melting cheese

How to make tomato sauce


Ingredients: 
       Pizza sauce:
* 4 plum tomatoes
* 3 gloves garlic
* 1/2 onion
* 1/4 tsp oregano
* 2 bay leaves
*1 tsp salt
* 1/2 tsp pepper
* 1/4 tsp sugar
poach the tomato in boiling water

peel the skin off & blend in
food processor

fry chopped onion and garlic with
olive oil
add the tomatoes puree to the onion and garlic
let cook until sauce become very thick

Instructions:
* Boil a pot of water 
* the poach 4 tomatoes in the boiling water for 5 minutes until the skin of tomato almost peeling out
* remove the tomato skin and puree in food processor
* meant time chopped onion and garlic
* heat cooking pan with olive oil + add puree tomato, oregano, salt, pepper, bay leaves and sugar. let it cooks at least 30 minutes until sauce become very thick


Pastel udang & mihun


Ingredients:
* 120 gr vermicelli noodle
* 250 gr shrimps
* 10 ready made pastel dough ( empanada )
* 3 boil eggss - cut into 4 size
* 3 shallot
* 2 gloves garlic
* 1 tsp salt
* 1/2 tsp pepper
* 3/4 cup frozen peas

Methods:
- Soak vermicelli in hot water for few minutes
- mean time, chopped the shrimps
- then blend shallots and garlic in food processor
- heat the pan with oil in 2-3 minutes. drop shallot & garlic paste to the oil
- let cook for 3-4 minutes, then throw chopped shrimps, salt & pepper for another 3 minutes
- then throw vermicelli noodle and peas. keep stirring with tog mix well until all spices and noodle together
- to wrap paste: take 1 dough + place filling in the middle + and add 1 ( cut ) egg
- closed into haft and shaped the end of dough , from corner to end with your finger
- fry with enough oil until golden brown

Pita Pizza with black olive


Ingredients:
* 1 pita bread
* 7-8 black olive
* Mozzarella cheese
* 3 tablespoon tomato sauce ( homemade or jar )

Instructions:
* Heat the oven 350f
* take 1 pita bread + add tomato sauce around the bread
* spread shredded mozarella cheese
* then add black olive over the cheese
* bake it in the oven about 5-7 minutes

Fita Pizza with quail eggs


Ingredients:
* 1 pita bread
* 4 quail eggs
* Mozzarella cheese
* 3 tablespoon tomato sauce ( homemade or jar )

Instructions:
* Heat the oven 350f
* take 1 pita bread + add tomato sauce around the bread
* spread shredded mozarella cheese
* then break few quail eggs, put over the cheese
* bake it in the oven about 5-7 minutes

Honey Barbecue wing


Ingredients:
* 10 wing - cut 2 size
* 1 cup flour
* 1/4 tsp salt
* 1/4 tsp papper
* paprika

Sauce:
* 1 cup barbecue sauce
* 2 tsp honey
* 1/4 tsp garlic powder
* 1/4 tsp pepper
* 1/4 tsp salt
* 1/4 tsp coriander seed
* 1/4 tsp paprika

Instruction:
- wash chicken wings, and let marinate with salt & pepper for at least 1 hour
- In big bowl mix flour, salt, pepper, paprika, then pour wings with flour mix well with your hand.
- Heat pot in medium heat with enough oil to fry chicken wings. let fry until golden brown.
- then preparing the sauce: mix all ingredients and cook in small pan just 5 minutes
- toss the cooked wings to the sauce and serve

semur daging ( indonesian beef stew )



Ingredients:
* 1 lb meat
* 3 shallots
* 2 garlics
* 4 cm ginger
* 6 tablespoon sweet soy sauce
* 1/4 tsp pepper
* 1/2 tsp salt
* oil

Instructions:
- blend shallot, garlics, ginger in food processor until soft.
- heat the pan with oil in low heat, then saute the blend paste for about 5 minutes
- then add meat, sweet soy sauce, pepper, salt
- add water if need it, stir and check the meat once a while
- let the mean cook until tender

Tumis Bayam sama telur puyuh


Ingredients:
* 1 bunch spinach
* 8-10 quail eggs
* 2 shallots
* 3 garlic
* 1/4 white pepper
* 1/2 tsp salt
* 1/4 tsp chicken bouillon
* oil

Instructions:
* Boil eggs until well done- take shells out
* Meantime, wash spinach and make sure no sand on the leaves
* slices the shallot and garlic very thin. 
* then heat pan with oil, saute the slices shallot and garlic for about 2-3 minutes
* trow the spinach, add, white pepper, salt, chicken bouillon and quail eggs.
* stir for about 4 minutes until spinach becomes soft and spices mix together

Ikan pepes tomat


Ingredients:
* 1 fish 
* 3 shallot
* 2 gloves garlic
* 1 cm ginger 
* 1/2 tsp turmeric
* 1 long red chilli 
* 2 candle nuts
* 1 small tomato
* 1/4 tsp pepper
* 1/2 tsp salt
* 1-2 lemongrass
* 1 bay leaf
* banana leaf

Instructions:
- Put shallot, garlic, ginger, turmeric, chilli, tomato, pepper, salt, candle nut in food processor. let blend until smooth paste
- meantime , wash banana leaf . then place the fish in the middle , pour the paste all over fish and garnish with lemongrass, bay leaf, and slice tomato
- close fish with banana leaf and put in the oven until cook

Bika Ambon


Ingredients A:
   * 1/4 cup coconut milk
   * 2 tablespoon yeast
   * 1 tablespoon sugar

Ingredients B:
  * 1 1/2 cup coconut mik
  * 1 1/2 cup sugar
  * 10 kaffir lime leaves
  * 1 tsp vanilla
  * 8 egg yorks
  * 250 gr tapioca
  * yellow food color

Instruction:
- mix ingredient A, then let yeast rest for at least 10 minutes
- In Ingredient B, combine coconut milk, sugar and kaffir leaves ( tear them apart for more flavor ) then cook in small pot for around 5-7 minutes. let it cool 
- Once coconut milk is cool, then mix ingredient A, egg yorks, vanilla and food color
- let the batter rest for about 3-4 hours 
- Turn the oven around 350f . brush the cake mold with butter and heat it in the oven 
- pour the batter over the hot mold 
- open stove's door when you bake this cake. 
- check the cake until cook about 45 minutes or depend on your stove.




Tagine oxtail with chickpeas


Ingredients:
* 1 lb oxtail
* 1 onion
* 2 gloves garlic
* 1/2 tsp cumin
* 1 tsp ginger powder
* 1/2 tsp paprika
* 1/2 tsp pepper
* 1/4 tsp saffron
* 1/4 tsp turmeric
* 2 tsp parsley & cilantro 
* 1 tsp salt
* 2 potato
* 1/2 lb green olive
* 1/2 can chickpeas
* 1/4 olive oil

Instruction:
* grated onion & garlic . Heat olive oil in pressure cooker or tagine. mix onion, garlic, cumin, ginger powder, papprika, pepper, saffron, turmeric, & parsley/cilantro and salt. cook until meat tender.
* 10 minutes before done, through the potato, olive & chickpeas in pressure cooker .
* eat with bread.


Scallion & shrimp Pancake


Ingredients:
* 1 cup flour
* 1 cup rice flour
* 2 eggs
* 1/2 tsp pepper
* 1 tsp salt
* 1/2 tsp paprika
* 5 tsp canola oil
* 1 1/4 cup water
* 10 shrimps
* 2 tablespoon sesame oil

* extra oil for frying

Instructions:
- Combine all ingredients in the bowl and stir together for smooth batter. 
- Heat oil in the pan and pour slowly little bit batter
- cook for both side until brown about 4-5 minutes 
- serve with any dipping sauce on your taste .


Sambal terasi kampung ( Indonesian spicy shrimp paste )


Ingredients:
* 20 gram terasi ( shrimp paste )
* 1/2 cup chilli
* 3 red long red chilli
* 1 tomato
* 3-4 shallots
* 1/2 tsp pepper
* 1 tsp salt
* oil for fry

Ingredients:
- Heat an oil in pan or pot and let all spices to cook for about 6-7 minutes
- once all ingredients get soft and caremelize 
- transfer to food processor, blend to almost smooth

Moroccan roast lamb


Ingredients:
* 2 lamb shanks
* 1/2 tsp mix saffron
* 1/2 tsp pepper
* 3/4 tsp salt
* 2 tsp rosemary
* 1 tsp garlic powder
* 1 bowl water
* 1/4 cup olive oil

pour the sauce and marinate 
lamb at least 30 minutes

brown both side the meat
add 1 bowl water and let cook in oven
for 2 hours

Methods:
- wash the lamb shanks.then combine mix saffron, pepper, salt, rosemary, garlic powder, and olive oil in small bowl
- pour sauce and rub all over the meat
- let marinate for about 30 minutes to 1 hour
- Heat stainless pan and put the lamb with mix sauce
- let brown for both side for about 7-10 minutes
- add water to the pan, then transfer the pan to stove  and let cooks for about 2 hours
- until water & sauce reduce . and meat almost falling apart. take it out and serve
