Roast Duck w/ honey glaze

Ingredients:
* 1/4 tsp sugar
* 1 tablespoon grated fresh ginger root
* 3 tablespoon oyster sauce
* 1 tablespoon sesame oil
* 1 1/2 tsp salt
* 1/4 tsp nutmeg
* 1/4 tsp cinnamon
* 1/4 tsp anise seed - ground

Glaze:
* 2 tablespoon honey
* 2 tablespoon vinegar
* pitch orange food color

Instructions:
- Rinse the duck inside and out under cold water
- pat w/ paper towel all over the duck skin to dry well
- mix all ingredients in bowl: sugar, grated ginger, oyster sauce, sesame oil, salt, nutmeg, cinnamon, ground anise seed
- Pour the marinate sauce, then rub all over duck with your hand inside and out
- Marinate duck for at least 4 hours 
- Bake in the oven about 1 1/2 to 2 hours
- glaze the duck skin every 20 minutes. repeat until sauce done

Dry the duck w/ paper towel
